Sweet and Sour Pork

I followed GRAMMA GORGEOUS's direction. Marinated pork in soy sauce, drained and then rolled in cornstarch. Fried pork, removed, fried veggies, then simmered both together in sauce and added pineapple near the end. I used carrot, celery, onion, green and red pepper, sugar snap peas and water chestnut. Her recipe for sweet & sour was a little tart. Next time I'll reduce the vinegar a bit.

Mama Corleone's Sausage and Peppers

Tasty! I took the casing off the sausage and sliced it before browning. I added more garlic and seasoning, a sliced purple onion, a can of diced tomato and used tri-color penne pasta.

Shrimp Scampi Bake

Yummy! I served this with linguine. There's just two of us so I halved the recipe. I used 80% butter and 20% olive oil. Sauteed the garlic in the olive oil for a minute then added the butter, lemon juice, parsley and (what I had) spicy brown mustard. We had jumbo shrimp size 16-20 per pound (tails off) which I had sprinkled with lemon pepper ahead of time. Baked about 11 minutes. I turned them over half way through baking and sprinked them with some parmesan cheese. Made my Mama happy.

Bada Bing Bada Banged Potatoes

Delish! I sort of winged it with the seasoning I had on hand plus I had to scale it down quite a bit for just my mom and I. When I tried to squash the potatoes they sort of fell apart so I just kind of broke them all up, stirred them all up with the other ingredients and then just made about 6 mounds on the baking sheet. I sprayed them with PAM and baked as directed. They were wonderful. Easy to make, crispy and tasty. Mom enjoyed them.

Sweet and Sour Chicken I

Pretty good, but the recipe is very confusing and is not clear on several points. I halved the recipe. It was a little bland even after I seasoned up the chicken with salt, pepper, garlic and onion powder and let it sit for awhile. Also, I sauteed the bell pepper plus an onion, carrots and celery in peanut oil and added the pineapple chunks. Then I made the batter and browned the chicken in my cast iron skillet in some peanut oil. I kept the veggies and the chicken warming in the oven, then made the sauce. I didn't have any food coloring. The sauce was easy to make, then I just dumped the veggies in the sauce and served it all over jasmine rice. Mom loved it. Not too sweet.

Japanese Chicken Wings

These were wonderfully sweet and gooey. I had about 4 1/2 pounds of wings so I doubled the sauce. I pre-seasoned the wings with salt, pepper, garlic and onion powder, dipped in egg and flour and browned them in a cast iron skillet with 1/2 Crisco and 1/2 butter. I used raw apple cider vinegar, less sugar and I added some ginger. Next time I will simmer the sauce first and add some cornstarch to thicken it. It took lots longer then 30 minutes for the sauce to thicken on the wings. I tossed some toasted sesame seeds on top when they were done. Great Superbowl appetizer!

Italian Sausage Soup

Very good. I used a box of frozen spinach instead of fresh and a can of pinto beans instead of great northern. I added a peeled and cubed potato and also a chopped onion. Mom and I loved all the veggie goodness.

Egg Foo Yung with Mushroom Sauce

Never had this before. Boyfriend said his mom used to make it. Looked it up, found this recipe with mushrooms, I love mushrooms, recipe looked pretty easy. Followed recipe, had to use canned bean sprouts and canned mushrooms but it still turned out great. Served it with Ham Fried Rice. Pancakes were not hard to make. And the sauce was tasty.

Brazilian White Rice

Nice nutty taste! Used more onion, maybe 1/3 cup and a heaping teaspoon of minced garlic from a jar. Cooked with chicken broth instead of water so I didn't add any additional salt. I will be making this again and again.

Spanish Rice II

Oh my! Delicious! Used chicken broth instead of water, extra chili powder and no additional salt. I sauteed the onion, garlic and bell pepper for awhile before browning the rice and then put it in my rice cooker along with the rest of the ingredients. Went great and looked great next to my crab enchilada's. Bonus points for making an impression on the man in my life!
