World's Best Lasagna

I just made this lasagna, and it was very very good. I do have to say the salt content was a bit much, BUT if your using low sodium tomato items or no sodium, then I can see the need for the tablespoon of salt. My husband thought it was PERFECT, he takes a salt shaker to everything though. I will definitely make this again, will reduce the salt to 1 teaspoon or omit and then salt to taste after about an hour of cooking the sauce. I used a 9 x 13 casserole dish and layered 4 lasagna sheets (instead of 6) on each layer, to give me 3 layers instead of 2.

Lobster Bisque

I had made this many many times. It takes a while for the bisque to tighten up so instead of adding the lobster meat as instructed which will get tough, I add it at the end so the lobster meat stays sweet and tender. Please note: I do add a piece of lobster when instructed (for flavor) but it is to tough to eat so I discard.

Basil Tomato Soup

With a few additions, this soup reminds me of the Tomato Basil soup at Nordstrom's cafe. I cut the recipe in half to see if this was to my liking before I made a full batch. I made it exactly as the recipe calls for and I found that it was a bit bland for my taste. My alterations were that I doubled the sugar, added a couple of pinches of salt, some fresh cracked pepper, extra basil, and a sprinkle of parm atop. My 18 year old son who has an opinion about everything said it was good which means it earned its 5 star rating. Will make a full batch moving forward.

Dessert Crepes

My first attempt at making crepes and this recipe did the trick. I put all the ingredients in the blender and mixed it until smooth. Served with berries, whipped cream and chocolate drizzle.... YUM!

Holy Cow! Winner winner seafood dinner. I did have to add some cayenne pepper for some heat, a small can of tomato paste, a little more of the basil, oregano and thyme. Also salt and pepper were needed. The family LOVES this and it's very easy to make.

Bread Pudding II

My oh My... Absolutely wonderful! I used 1/2 white sugar and 1/2 brown other than that I didn't change a thing. Easy to make and takes terrific. Will make again and again. Thank you for sharing!

Turkey Brine

Will use this brine for every turkey and or chicken from here on out. Used this recipe for Thanksgiving 2010 and my bird was not only moist and every bite flavorful but it looked pictured perfect. The most beautiful and best tasting bird ever. I added some pepper corns and a couple of bay leaves. Thank you for sharing!

Fresh Corn Pudding

I read the reviews and made a few adjustments. I had 3 fresh ears of sweet corn and used all, about 3 1/2 cups. Instead of 2 cups of milk, I used 1 cup milk and 1 cup heavy whipping cream. I added 2 tablespoons of grated parm cheese, and 2 tbs mayonnaise. I used white ground pepper to keep the look of the dish white and creamy. SOOO Yummy!

Chef John's Caramel Chicken

Thank you Chef John!! My family loved this. I tasted it before I served it and I thought it was to sweet, but once you put it over rice, the rice cuts the sweetness. I'm a baker so I packed the brown sugar, next time I won't and see what the family says. This recipe is easy and packs lots of compliments.

My Best Clam Chowder

Fantastic! Will make this again and again. I cooked 6 strips of bacon and sauteed/softened the vegetables in the bacon fat before I added the clam juice to the pot. I added 4 cans of minced clams and there was enough juice to cover the vegetables so no water was needed. I also added some cayenne pepper as we like a little kick to it. The red wine vinegar is brilliant.... DO NOT OMIT!!!

Chef John's Perfect Prime Rib

Was a bit skeptical because our Kitchenaid electric oven has a cooling fan which turns on when the oven is turned off. So I had a back up plan just in case, BUT I didn't need it. I followed the recipe exactly, brought the roast to room temp, seasoned the beef, did the math and in it went. Came out PERFECT, even with the cooling fan that can't be turned off. Will be my prime rib recipe moving forward. Tasty, tender and fool-proof!

Best Brownies

WOW! These are amazing. I doubled the recipe as we love brownies and they disappear quickly. I mixed everything by hand. I whipped up the eggs and added them to the recipe last to ensure the mixture was not over mixed. I added walnuts to the mixture as well. The brownies were perfect after 25 minutes of baking, texture was perfect smooth and not cakey just as a brownie should be. Will keep this as my brownie recipe moving forward. Thank you for sharing!
