Roasted Vegetables

Reviewed: Jun. 18, 2013
I made the mistake of using dried herbs and DO NOT recommend it - next time I will use fresh herbs as directed! Still gets 5 stars from me since the error was my own, and it is a lovely dish I will surely make again. Thanks Saundra!

The Best Meatloaf

Reviewed: Mar. 23, 2012
Pretty good! I like the texture a lot. It held together well and I did not find the raw onions & green peppers overwhelming, as some reviewers have. I think I will experiment a bit with toppings, I used the Heinz 57 and it seemed a little bland. I'm sure that is just a matter of taste, I am more accustomed to the ketchup/brown sugar style toppings with meatloaf. Thanks for sharing your recipe Denelle!

Sausage Egg Casserole

Reviewed: Feb. 5, 2012
This is a great use-what-you-have recipe! I was looking for a bread-less egg casserole to use up some leftovers I had on hand. I didn't have any breakfast sausage so I subbed ground beef, used cheddar instead of jack, a big dollop of salsa instead of chiles, added some baby spinach & a chopped tomato along with the mushrooms and green onions before adding to the egg/cheese mixture. It came out great. The texture is so light and fluffy! I'm sure it is even better with sausage. I don't think it is lacking anything without the bread, would be great for those cutting carbs! Thanks KNITWIT, love this!

Cajun Chicken and Sausage Gumbo

Reviewed: Jan. 11, 2012
Very tasty! In all honesty, it's not exactly a traditional gumbo. It is much thicker and creamier than what I am used to when it comes to gumbo. We did enjoy it though. Thanks for sharing!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 10, 2012
Wow! This chicken is amazing. The seasoning is perfect, and it is so tender and juicy. This recipe will definitely go into heavy rotation at my house. I'm going to use the leftovers to try "Cajun Chicken and Sausage Gumbo" by yoyo78 (from this site) tomorrow, since it calls for a rotisserie chicken. Thanks Sue!

My Best Clam Chowder

Reviewed: Jan. 8, 2012
This was delicious! I had never had homemade clam chowder before, only the canned stuff. Now I think I am spoiled forever! I cant imagine ever being satisfied with canned again now that I have tried this. I did apply a few reviewer suggestions - I exchanged 1/4 of the butter for bacon grease, added 1/2 tsp. old bay, 1/2 tsp. onion powder, 1/2 tsp. garlic salt. The only small adjustment I would make next time, is using larger chunks of clam rather than the minced. Thanks for sharing!

Slow Cooker Beef Stew I

Reviewed: Dec. 16, 2011
This was delicious! The only small adjustment I would suggest is to add the diced potatoes halfway through the cooking cycle - I personally like a little bit of firmness to my potatoes..and being cut small like that, they pretty much fell apart. A really excellent recipe though, great flavors..5 stars from me! Thanks for sharing!

Pralines

Reviewed: Sep. 22, 2011
These were sooo good! I followed the recipe exactly, and used the ice bath suggestion from a reviewer..and wanted to suggest to anyone trying this technique, do not let it sit too long in the ice- the mixture cools down really fast and made it way too thick and lumpy...not the nice glossy appearance I would expect for pralines. I think would skip the ice bath altogether next time. They were delicious anyway..thanks MARKR, for a great recipe!

Cousin David's Slow Cooker Brisket

Reviewed: Aug. 26, 2011
While I like the idea of doing brisket in the slow-cooker, maybe I am used to how it comes out when we do it on the grill with barbecue sauce - it came out very chewy (tough even?) and too ketchup-y for my taste.

Don't let this happen to you - use parchment paper! (see pic.) Otherwise it is totally delish :) Thanks for sharing this amazing recipe!

Country Chicken

Reviewed: May 16, 2011
I think as others have pointed out, this is a great base recipe. I followed it almost exactly, except I added a chopped onion and fresh mushrooms, and some seasonings - (salt/pepper, rosemary, thyme) I think I would attempt this again with a few minor changes - the whole stick of butter along with the fat from the chicken skins, really is a bit much. I spent a lot of time skimming fat from the top of this dish before I was able to serve it. So next time I would definitely reduce the butter by 1/2, and use skinless chicken. It also needed to be thickened with corn starch quite a bit to produce a "gravy". But overall, an easy, economical recipe that I will enjoy playing around with & tweaking to suit my own taste. Thanks for sharing!

Chicken Wraps

Reviewed: Dec. 28, 2010
These are sooo good! They make a very impressive appetizer or we even enjoy them as an entree. I like to line a large baking pan with foil (for easy clean-up) and then bake them on a rack. After the 20 minutes cooking time, I let them brown for a few minutes under the broiler on both sides to crisp the bacon a bit more. Delicious! Thanks Karen, for a great recipe!

Quick and Easy Home Fries

Reviewed: Aug. 14, 2010
Delicious! Slightly crispy on the outside, tender but not too mushy on the inside. I soaked the potatoes in salted water for a few minutes before cooking (helps to remove some of the starches to keep them from sticking together when frying) I then patted them dry, and spiced them up with seasoned salt, garlic powder, red pepper flakes, and a few green onions. They were absolutely perfect! Thanks so much for this great basic recipe!

Spinach Stuffed Chicken Breasts

Reviewed: Aug. 10, 2010
Very tasty dish! I think I will try uncovering it toward the end of the baking cycle next time, to allow it to brown a bit, just for a nicer appearance. A definite keeper, thank you!
