New Red Potato Salad

For my first attempt, I made this for a barbecue that I was invited to and everyone loved it. I didn't have the distilled white vinegar so I had to substitute rice vinegar and it was still wonderful. This will be the only potato salad that I will be making. Thanks Dwagner!!

A Plus Fair Corn Dogs

I usually buy frozen corn dogs for my children and decided to try and make them from scratch. Well, this recipe was so easy and delicious. I did eliminate the bacon drippings, used beef hotdogs cut into thirds and covered them in flour before dipping into batter. The result was wonderful. My children rated these the best corn dogs they have ever eaten. Thanks Roby!

Homemade Black Bean Veggie Burgers

This is a very quick and easy recipe. I omitted the peppers, used red onions, seasoned breadcrumbs and cut the amount of chili and cumin in half. I didn't care for the chili and cumin taste and next time I will experiment with spices that I like since the cumin and chili over power the taste. I also used an extra large egg and that seemed to hold everything together nicely. I will definately make this recipe again.

Garlic Shrimp Scampi

This is a great scampi base. I added a little olive oil (tsp) with the butter, increased garlic to 4 or 5 cloves (I didn not remove from pan) squeezed half a lemon, used only 1 tbsp. of bread crumbs and added some parsley along with the parmesan cheese. My family loved it. Thanks MLT!!

Plain Cake Doughnuts

This was my first attempt at making doughnuts and they were delicious. Like others, I also found dough sticky so I kept adding flour to surface and my hands (probably another cup worth of flour). I made doughnuts and holes. After removing from pan, I sifted confectioners sugar on some and brown sugar and cinnamon on others. I will definitely make these again. Thanks Jennifer!

I love this recipe. I replaced the wheat germ and raisins with a 1/2 cup of flax seeds and orange flavored cranberries. I also like it warm with rice milk. Thanks Jen!
