I have lost 155 lbs! I have gone from a size 28 to a size 8. I used to be a Personal Chef. Now I am a Certified Clinical Hypnotherapist. I went completely Gluten Free a year ago and am THRILLED with the results in the way I feel and look.
My favorite things to cook
Stir Frys! Fast, easy, always different. Soup! Easy way to use up the farm fresh organic veggies in my frig. Baked chicken. Couldn't be easier.

Refried Beans Without the Refry
I no longer eat food from a this recipe using dry pinto beans was exactly what I was looking for. It's amazing how hard it is to find recipes using dried beans. Anyway, I was really happy with this recipe. I've made it a few times now, and sometimes it requires a little more water than others, but you can always dial it right in after mashing. This is my family's go to refried bean recipe now.

Christmas Brunch Casserole
I assembled this on Christmas Eve as suggested. In the morning I just put it in the oven while we opened presents. The whole house smelled like I was slaving away in the kitchen, and I wasn't. YAY! I doubled the amount of eggs to 8. I put the cooked bacon in a baggie and sprinkled it on top before I baked the casserole...I was worried that the bacon would get soggy, which I HATE. My oldest son, 19, said in the middle of breakfast, "This should have bacon all the way through." LOL. It's definitely a keeper, and I plan on making it again for Easter Breakfast.

Slow Cooker Stuffing
I made this recipe Gluten Free. Made my own bread cubes with Udi's Gluten Free Multi Grain & White breads, then followed the recipe + added some garlic to the saute mixture. The flavor was very good. The ease of using the crock pot was amazing. I wasn't thrilled with the consistency of the gluten free bread tho. I don't think this had anything to do with this recipe...just the gluten free bread part. It still worked tho, and all my non gluten free eaters ate plenty of the stuffing.
