Microwave Mochi
This was fantastic! I decided to make a half batch to see if I could really make mochi in the microwave. It seemed too good to be true. I followed the suggestions of using half the sugar, a couple drops of vegetable oil instead of vinegar (or canola in my case) and turning it every 2 minutes in the microwave. I also used coconut milk in place of the water. I am rolling it in kinako for some and cornstarch for others. The result? Delicious!

Chicken and Gnocchi Soup
Fantastic soup. I added in some poultry seasoning and a couple of extra shakes of thyme. A whole bag of baby spinach seemed like a lot so I only put about 3/4 of the bag in. I could have used the whole bag and it would have been fine (and I wish I would have!). I was worried that my family wouldn't care for it as we aren't big soup eaters, let alone a creamy soup, but it was loved by all!

Easy Garlic Broiled Chicken
I baked it for 45 minutes at 375 degrees as suggested by another review. It was scarfed down by the family including picky child. I feel like it was missing something, maybe ginger? Overall, will make this again and recommend this recipe!
