Tim's Green Bean Casserole Extraordinaire

I really didn't care for it and neither did my fiance. It was so rich with sour cream, swiss cheese and tons of butter (let me say that again, too much butter). We thought it was too heavy. I won't be making this again. If I could give this no stars at all I would do it.

Pork Chops to Live For

I made this again for Valentines day and my husband raved that he would pay $30-$40 for the meal at a restaurant and still would be impressed by it. I saute some garlic in olive oil, then add the pork (rub some salt and pepper on the pork first) and saute until each side is browned. I then put the pork in the crock pot, sprinkle sage, thyme and more pepper on the pork. Then I add the onions, soup and milk. Wonderful! Makes a great mushroom gravy that goes great with mashed potatoes.

Pasta Pomodoro

This has become one of my fiance's favorites! He requests it all the time. It is so quick and easy to make. I use diced canned tomatoes to make it quicker and a can of tomato paste to make the sause a little thicker.

Lime Chicken Picante

This has great flavor. I doubled the sauce the second time I made it and only used 3 chicken breasts. It allowed us to have plenty sauce for the rice. I put more lime juice in than is called for.

The Best Banana Pudding

This was a little bit sweet for me but my fiance loved it. I think I will will put in half the whipped topping next time so it will still be sweet but not so overpowering. I didn't use as many bananas as the recipe calls for. I think I only managed to fit 7 in my dish with everything else.

Easy Seven Layer Vegetable Salad

Great salad. I will only add half the peas next time. I added tomatoes and next time will also put in some cucumber. I was pleasently surprised that I liked the mayo dressing. I added a little more sugar than what was called for. The bacon was one of the best parts of the whole thing.

Angel Hair Pasta with Shrimp and Basil

I made this recipe for the second time this weekend and LOVED it. It is fabulous. This is my new favorite pasta. My fiance asked if we could make this every week. I added some heavy cream (1/4 pint) and some tomato paste to make it richer and creamier. The sauce is fantastic. I also added a bit of red pepper to counter the sweetness. The first time I made this my finance insisted that we sould get the shrimp steamed and with spicy cajun seasoning. I couldn't talk sense into him. What's the point if you are adding them to a dish? Well, he understands now and agrees that we won't do that again(sometimes they just have to learn for themselves). :) Wonderful. I can't wait to make this again.

Chicken Quesadillas

I have made these several times before and I love them. I made them again a few days ago and tried what a few other people suggested - not folding the tortillas but having one on the bottom and one on the top. I didn't like it as much. This is probably because I like to have lots of stuff in them and they are then too fat - if the tortillas aren't folded over you can't pick it up to eat. It falls apart. I used 1lb of chicken and thought the fajita seasoning was a little strong. I have used more chicken in the past - 1.5lbs - and it was fine.

Aunt Teen's Creamy Chocolate Fudge

Wonderful. I don't think I boiled it enough though because not all of the sugar melted. I was afraid I would scorch it. Next time I'll try to be a bit more brave in boiling it.
