Banana Pie

Even though I got rave reviews from my guests, I still am a bit disappointed with this pie. It tasted like banana pudding to me. I used a prebaked (homemade) pie shell in place of the graham cracker crust, but followed the recipe for the filling exactly. What I got was a banana pudding pie. I might try to use one package of vanilla pudding and one of the banana instead of the two and I may add more cream cheese. By the way, my cream cheese didn't mix into the batter too well (and I used a kitchenaid mixer) and I was a little concerned about it's appearance, but once it chilled overnight it seemed fine. I also made homemade whipped cream instead of the cool whip stuff - so that helped with the taste.

Strawberry Pie II

As other users have said, this pie didn't quite gel the way I wanted it too - and I used 4T. corn-starch instead of three and let it "set" overnight. Next time around I'll be using either more cornstarch or trying the strawberry or plain knox jello to try to thicken it up a bit. I'm not a huge fan of that red strawberry glaze stuff at the stores, so I'm bound and determined to find a way to make this pie work. As far as taste goes, it was wonderful, but my presentation really ended up looking more like strawberry mush. I was a little bummed out about that since I used this pie for company.

Chocolate Chip Pie IV

WARNING - NOT FOR THOSE WHO JUST TOLERATE CHOCOLATE! This wonderful pie is rich, filling and extremely addictive! I served it warm with vanilla ice cream on top and a drizzle of caramel sauce (ice cream topping). It was an instant hit and several of my guests requested the receipe. I'm glad that I made the pie slices smaller because of the richness of this pie.

Fresh Blueberry Pie II

This recipe is SUPER easy and SUPER delish! I baked it for some friends and they gobbled it right up. We picked blueberries, so they were very fresh and large, and the pie was just the right amount of sweet and tart. The lemon juice isn't overpowering, and the fact that a layer of blueberries isn't cooked means you'll have a pie that won't completely fall apart or get runny. This is my new blueberry pie recipe - why mess with perfection?

Broiled Tilapia Parmesan

WOW! Great flavor, easy to prepare, and my KIDS ate this recipe! I was looking for a low-fat dish so I subbed low-fat mayo, moove-over butter and reduced fat parmesan. I ended up with a very flavorful dish and no one knew the wiser. I was able to cut almost half the fat grams in the original recipe by substituting. Thanks for a great recipe!
