Eclair Cake

Tasted nothing like an eclair, not even close! Too artificial tasting with all that cool whip and instant pudding. I rather make real eclairs, even if they are a little bit more work, well worth it.

Buttercream Icing

Made exactly as directed, except I cut the recipe in half to frost the top of a 13X9 cake in the pan. Perfect amount of frosting and delicious!

Seafood Chowder

Being a native New Englander, I know chowdah, and chowder has bacon! So I started this recipe with frying the bacon, then I sauteed the onions and raw vegetables in the grease. Continued with the recipe from there and tasted it after it was complete. Decided it needed a little more seasoning, and less cayenne pepper, fortunately I only put 1/4 tsp to begin with, but could use a touch less. Bay Seasoning makes this chowder awesome! I will make this again.

Baked French Toast

Creamy Au Gratin Potatoes

I made this exactly as directed, using a pre-made mixture of cheddar and Monterey Jack cheese. Quick and easy to make, and it reheats nicely. Just add a little milk or cream to the leftovers, cover and bake at 350° for 20-30 minutes, stirring occasionally to blend the milk in with the cheese.

Pork Chops with Raspberry Sauce

I used bone-in center cut chops for this recipe, because it was what I had on hand. Other than that, followed the recipe exactly. Great flavor! I love raspberries, so I also used fresh raspberries as a garnish, and that put this right over the top! A keeper for sure. I can't wait to try this with chicken.

Banana Cake VI

I made this cake for the first time today. I didn't know what to expect with the unusual baking directions, but I followed the recipe exactly. The baking time in my oven was exactly one hour as stated, toothpick came out clean and then exactly 45 minutes in freezer. I also removed it from the pan with no problem after removing it from the freezer. This is amazing cake! It is moist, flavorful, and has a wonderful texture and crumb. There are no spices in this cake like banana bread, it has a nice buttery banana flavor, clean and natural! I made the frosting but didn't frost the entire cake as some in the household don't like frosting. I love this cake just as much without frosting, just a slight dusting of confectioners sugar for appearance is all you need. Excellent Cake!

Peanut Butter Bars I

Wow! These are awesome bars. I don't crave peanut butter too often, but when I do, these will always fit the bill. Rich taste, super easy to make. Definitely a winner! I followed the directions as given, had no problems whatsoever. I did use a mixer to blend the crust portion, making sure it was thoroughly blended. I also used a 10 inch square pan, making them nice and thick!

Favorite Old Fashioned Gingerbread

Beef Stroganoff III

Definitely Delicious! Very easy to make. This one is a keeper for sure. I used fresh mushrooms and browned them in butter before continuing with the recipe. I also made it once with leftover grilled sirloin tips and that was awesome. Added the cooked meat at the end just to warm through. Very easy to make and sure to be a crowd pleaser.

Delicious Raspberry Oatmeal Cookie Bars

Absolutely the best! I've made these with both raspberry and boysenberry, and each of them was a winner. One of the easiest and best tasting desserts. They won't last long, you better bake a double batch in a 13 X 9 pan!
