Persimmon Raisin Cookies

Reviewed: Nov. 8, 2013
This recipe definitely deserves all the good ratings! The only change I made was to swap raisins for white chocolate chips. The cookie flavor was very good, with just the right amount of sweetness. I was a little nervous while mixing in the dry ingredients, because it was extremely dry. However, once I mixed in the persimmon, it suddenly became cookie dough. Now I can't decide if I am willing to share!

Easy Fruit Cobbler

Reviewed: Aug. 12, 2012
This is possibly the best desert I've ever had. I made it exactly as the recipe says, using bing cherries as the fruit. I can't wait to share this recipe with my friends (although I'm not sure I'd be willing to share any of the cobbler)!

Peanut Butter Carrot Cookies

Reviewed: Sep. 22, 2011
These sounded bizarre, but I liked all the ingredients, so I gave it a try. I was surprised at how delicious they were! I followed the instructions exactly as written, except I used white chocolate chips. I love how you can taste a little of all the flavors, and nothing is overpowering.

Mexican Wontons

I used cheddar/jack and added a little dab of diced ortega chilis in each one. So good, it's hard to stop eating them!

Tomatillo Soup

Reviewed: Jan. 23, 2011
What a fantastic recipe! I substituted a roasted poblano for the jalapenos, since I can't take too much spice. I also added a can of black beans that I had on hand. The broth was a bit thinner than I expected, but the flavor was so good, it doesn't matter.

No Bake Cookies V

Reviewed: Dec. 11, 2010
These turned out great! I used creamy peanut butter, so I added an extra 1/2 cup oats. I used whole oats, since I didn't have any quick, but it didn't make a difference. I also used vanilla soy milk, since that's what I had. I love the flavor and ease of this recipe. I will definitely make them again.

This is a fantastic recipe! I added 2 roasted poblano peppers and it gave it a nice unique flavor. I'll definitely make this one again.
