Bean Soup With Kale
Really yummy. I may have oversalted it a little, but it's still very tasty. I used kale and red chard (had both in my CSA box this week) and a few red potatoes diced. Added a can of fire-roasted tomatoes instead of plum tomatoes. Also added a healthy dash of lemon pepper shortly before serving.

Hot Pizza Dip
I made several modifications to this recipe and my husband loved it. I enjoyed it, but he literally scraped the bowl down! Used neufchatel instead of cream cheese, added chopped garlic, red pepper flakes and hot sauce to that mixture, then thinned it with a little non fat plain yogurt. I also used more of each spice because we like a lot of flavor. I subbed red bell pepper for green and used vegetarian pepperoni instead of the real thing – saves lots of calories and cholesterol, in addition to the animal! Finally, I baked it for 20 minutes at 370 instead of microwaving. We used yellow corn tortilla chips but I think next time I'll use crusty bread.

Shredded Potato Quiche
Very nice for a Sunday morning brunch. I cooked the heck out the potatoes, as suggested by other reviewers, but they still ended up tasting more like mashed potatoes on the bottom. It didn't matter though, because everyone agreed that the flavor was lovely. I used some shredded smoked gouda and scallions in this quiche as well.
