White Cheese Chicken Lasagna

I love this lasagna and I got compliments for it. I didn't have spinach so I used mushrooms, and leftover breast from a roasted chicken. The sauce is delicious. I added More garlic, used fresh grated Parmesan, and did not have oregano, but it was still really good. I didn't follow the layering as I did ricotta, chicken and mushroom, then sauce. I can't wait to try it with spinach.

Corn and Zucchini Melody

This is a very yummy side dish. I did not have an onion, but I did add a seasoning blend called "Spike" and I used colby/jack cheese. It was delicious and I can't wait to make it again, next time with an onion.

Mom's Zucchini Bread

This bread is wonderful! I reduced the amount of sugar to two cups and used half white sugar, half brown sugar. I also added a touch of nutmeg. I only had two teaspoons of vanilla extract on hand, but I am very pleased with the results, and so is my boyfriend who says we can just eat zucchini bread for dinner.

Old Fashioned Potato Salad

This recipe is just like grandma used to make but with a little oomph. I did not have garlic salt or celery salt, so I used 1/2 tsp. table salt, 1/4 tsp celery seed and 1/8 tsp. garlic powder. I finally found my perfect potato salad.

Creamy Blueberry Pie

This pie was a wonderful! I have never made a blueberry pie before, in fact It's only my fifth pie, and it turned out excellent. I did not have a deep dish pan so I used a regular pie pan and reduced the blueberries by half a cup and left out some of the custard mixture, using enough to fill the crust. I did add a teaspoon of vanilla to the mix. I used a homemade butter flake crust and added 1/2 teaspoon cinnamon to the topping. My boyfriend, who doesn't normally like fruit pies, couldn't get enough so I'm making another one today. Delicious!

Oven Fried Chicken II

This chicken was not what I had hoped. It was nothing like good fried chicken. It was not crispy, and it was chewy and greasy. I don't think bread crumbs do any favors to this recipe. The flavor was just not there, and I ended up peeling all the breading off because it wasn't good.
