Cheesy Kale Chips

Reviewed: Jan. 3, 2014
Yum! I made four batches: 2 exactly as the recipe called for, one with just olive oil and sea salt, and one with sesame oil, sesame seed and garlic salt. My seven year old daughter ate the entire first batch and came back for more. My favorite of the 3 is this one with nutritional yeast. Thanks!

Lime Creams

Reviewed: Jul. 4, 2013
Yum! These are a great subtle cookie in a world of white chocolate macadamia pecan fudge madness. I doubled both the dough and filling recipe, and added a bit more butter to combat dryness I read in other reviews. Turned out with 49 cute little cookies that will be a nice summery treat at my potluck. Thanks for the recipe!

Mary Wynne's Crabapple Jelly

Reviewed: Aug. 6, 2012
Note the amount of juice you get depends on how much water you cover the apples with. I made 2 batches. The first one I barely covered the apples because I didn't want it to not set (a problem that I've had making other kinds of jelly before). I only got a cup and a half of juice so I used a cup of sugar. It set up very nicely. The second batch I got 3 cups of juice so I used 2 cups of sugar. It didn't set as well. I think if I'd boiled it longer it would've been ok. I will use the batch that didn't set well as syrup for pancakes.

Refried Beans Without the Refry

Reviewed: Jan. 29, 2012
Fabulous - so easy, quick and cheap! You could do so many things to tweak this recipe to your own tastes, but I find it delicious as written. If you need more flavor, squeeze some lime juice into it or add more cumin. Don't worry about the jalapeno and kids. My kids are both wusses when it comes to spicy and they don't even notice the jalapeno. If you like it spicy, add more than one, or keep the seeds. In our house, we eat the whole batch in about a week. It's great to have them around when in a rush for quick burritos, nachos, quesadillas, etc. Thanks for the recipe.

Polenta with Spicy Sausage-Veggie Sauce

Reviewed: Nov. 17, 2010
Yummy! Even my hubby, who isn't a fan of polenta, raved about it several hours later. I couldn't find tubed polenta, so I used instant from a box, then spread it on a cookie sheet and baked it. After baking, I cut it into rounds and broiled it with havarti on top before adding the veggie mixture. (you need to add your own seasoning to the mix). I'll be making this again. Thanks!

Spinach and Leek White Bean Soup

It's a keeper! My three-year old even said "I love this soup!" I think the couscous really makes a big difference. We'll be making this soup often.

Lemon Zucchini Bars

Reviewed: Sep. 18, 2009
I love the fluffiness of this cake! I have made zucchini bread in the past that was very dense and heavy, so this was a nice light treat. I may try it without the walnuts, which my kids don't like so much.

Zucchini Herb Casserole

Reviewed: Sep. 8, 2009
Very good! Meat-loving hubby loved it and is taking leftovers to work tomorrow with some diced chicken in it. I followed the recipe except I used fresh basil and packaged saffron rice. It was a bit runny but I was in a hurry and didn't de-seed the tomatoes as well as I could have. A great way to use up garden veggies. Will definitely make this again.

Garden Tomato Salsa

Reviewed: Aug. 28, 2009
I agree with a previous review - it's a great basic recipe to adjust to your own taste. I found it a bit bland after making it & letting it sit for about 1 1/2 hours, so I added the other half of the lime (along with the zest), doubled the cilantro and added more salt. I used 4 small jalapenos from my garden -could've used more for a hot salsa. I also added some zucchini because I had it, and 3 garlic cloves. The additional lime really made a difference!

Quiche Lorraine I

Reviewed: Mar. 1, 2009
I've been making this quiche for over a year now and my family loves it. It's the only way my 2-year old will eat eggs. I use veggie bacon instead. I've had it come out runny too, but I figured that's because I'm at high altitude. A few more minutes in the oven (at the higher temp) does the trick. Thanks for a keeper!

Hummus I

Yummy! I used a little olive oil to thin it instead of the recommended water. It has a nice nutty taste.

Pineapple Enchiladas

Reviewed: Nov. 29, 2001
I used both corn and flour tortillas when I made this recipe (separately). I thought the corn tortillas gave it much more flavor but my husband like the flour ones better. He was not at all sure he wanted to try this recipe but he ended up liking it even though he's not a huge pineapple fan. I really enjoyed it!
