About this Cook
I am a single father, going back to school to pursue a nursing degree. My hobbies include disease elimination through nutritional education and healthy practices. I don't have a lot of time to cook, but I do enjoy it, and have found that it beats eating out or purchasing processed food. I really enjoy that improved taste of natural, whole foods, and look forward to helping people discover the joy of nutritional, healthy choices and habits.
My favorite things to cook
whole foods with as little "processing" as possible. i don't believe we can improve on what God has created, and all processing destroys vital nutrients in our food, which is already nutrient deficient due to our farming practices.

Potato Cheese Soup
Good soup, but too heavy. Next time I'll use half the cheese (in fact, I thought it tasted great BEFORE adding the cheese). Also, I used rice milk instead of cows milk so it's even lighter than it would have been. Also, used celery instead of onions since neither my son or me like onions. Also, chopped up fresh parsley instead of dried. Thought that added some great flavor. Will definitely make it again...just with a couple more modifications (I like to experiment). Maybe with cheddar instead of Swiss cheese next time...

Spicy Vegan Potato Curry
Delicious! I modified it slightly when I made it (it's a habit of mine based on available ingredients and taste) but it's a great recipe. :) Use 1/2 tsp cayenne pepper for people who can't handle spicy. I used 2 cause that's how I like it. :) This recipe can use any number of vegetables, and I always use brown rice instead of white rice. Once again: delicious!
