Mozechilli Casserole

I ended up using a container of cottage cheese that I had decided I would never eat for the middle layer and a few handfuls of shredded cheddar on top since we didn't have mozzarella on hand. I also put a can of basil, garlic and oregano chunky tomatoes in with the beef after it was cooked through and let it simmer and reduce before adding the spaghetti sauce. It turned out amazing! My husband loved it and said it's better than regular lasagna! That's an excellent review from him!

Cabbage Kielbasa Supper

We left out the chicken broth since the kielbasa (we used 3 pkgs since 2 is never enough meat for us) kind of makes it's own broth. We also left out the potatoes thinking the texture would just be too strange for us. Since we left out the potatoes I sliced up a couple large carrots and threw those in instead. It turned out amazing! My slow cooker was too small so I split the veggies and sausage into 2 large pots on my stove-top and cooked it for a couple hours on medium low heat. My husband usually just tolerates my cabbage and kielbasa nights (I'm addicted!), but this time he actually LIKED it!! I'm SO happy with this recipe! He said we'll have to do it again! YES!!!

Heart Attack Eggs

Absolutely delicious! My dad has cooked his eggs this way for 60 years. He has one every morning - fries the bacon and toasts his bread, cooks the eggs in the grease and butters his toast, slaps the eggs, bacon and a slice of American cheese between the 2 pieces of toast and heads for his recliner! Good stuff, but then again, I don't turn mine black with pepper! lol - Thanks for sharing this recipe!

Easy Batter Fruit Cobbler

This was very easy to make, though I had to double the recipe. I found the butter level was fine, I just had to whisk it into the batter after I poured it into the pan. The cake was delicious, but I wouldn't recommend using only raspberries as it can be a tad too tart! Next time I'll try peaches with cinnamon instead. My husband loved it anyway!

Like a few others I used cream of chicken soup. It did make a ton, but that's a good thing since I have 5 hungry boys to feed. They were hesitant at first, but they finished their bowls!

Classic Irish Boiled Dinner

I didn't really care for the green beans in this and the cabbage and potatoes were just too different in texture to really enjoy it. The smoked meat was delicious and it made some amazing gravy with drippings, but I didn't really care for the smoky flavor in the vegetables. This was the first time I'd cooked onions in quarters and I will definately be doing that more often! Thank you for the idea!
