Carrots Au Gratin

I have been making this for years but instead of the crackers, I use Kellog's corn flakes crumbs. It is fantastic. This is my default potluck dish, and I never take any back home. I have even started writing out several copies of the recipe before hand to save time, since I get asked for it so many times. I hate candied carrots so this is a wonderful alternative to them.

Quinoa and Black Beans

I am not a big reviewer, as I don't think I am educated enough to be one. BUT, this dish is wonderful. I took one suggestion and added a can of tomatoes with green chilis-oh my goodness! This is a keeper. My husband, who could care less about nutrition, asks when I am making it again. Well done!

Fresh Pear Pie

Someone sent us a box of wonderful pears for Christmas, and we couldn't eat them fast enough. I found this recipe on the site, and decided to try it to use the pears. My husband went nuts. He said it was the best pie ever. I will definately make this again and again. Thank you!

Sauerkraut-Stuffed Slow-Cooked Pork Roast

I just returned from the midwest with a "real" pork roast, and was looking for a good recipe for it. I tried this one. I love sauerkraut, husband does not. He didn't even know it was in there. I followed recommendations of some others, including a whole onion, some liquid (broth), caraway seeds, and liquid smoke added. I thought that really helped. I agree with another reviewer that the cook time is way to long, although I also think my crock pot is super hot. The taste was ok, but the pork was a little tough, due to over-cooking, even though I cooked it less than recommended. Trying to up the taste level, I added a can of succotash I had on hand, as well as frozen corn. I served it over brown rice. Husband loved it. It wasn't spectacular, but good, healthy comfort food. Mixed it all together for lunch the next day, and put it pita bread. It was almost Turkish! Still have a ton of leftovers (there are only two of us), so I am going to try the suggestion of using gravy on it. Should be good. I am a Scandinavian, so didn't grew up with a lot of spice, and this would have fit right in. I love spice now, but don't mind a nice simple recipe reminding me of childhood now and then. Thank you.

Grilled Salmon I

I made this exactly as listed. I know that most of the reviews loved it, but both my husband and I thought it was way too sweet. Neither of us appreciate a sweet glaze, so this is just a personal preference. I will make it again, but will probably half the brown sugar. If you like sweet on your fish, this is definately the marinade for you.

Honey-Mustard Baked Chicken

Adrienne's Cucumber Salad

My husband is a cuke freak, and I made this for him with all the extra cukes out of the garden. It is very simple, and he loved it. We discovered that the longer it sits, the better it is. Since there are only two of us, it took us several days to eat it up. The first day it was good, the third day it was delicious! Nothing fancy, just a nice, simple salad that hits the spot.

Sammy's Stuffed Bell Peppers

I made this the other day. There is no way this makes 4 servings. I used it on four large peppers the first night, but still had over half of the mixture left over. I froze it, and it stayed wonderful. The second go around, I was able to fill 5 HUGE peppers. The taste was wonderful the first night, when I made it with green peppers, but the second time I used red peppers, and it was even better. Also, the second night I didn't have any more tomato sauce to top with, so I used what I had on hand, which was a can of Hunt's spaghetti sauce. In my opinion, it had just a bit more kick, and hubby and I enjoyed it even more. Very good recipie, and easy to modify to one's particular taste. Next time, just as a preference, I will probably use a bit more rice in mine. Definately worth trying . . .

Flatlander Chili

I made this for the first time, making a few changes following other reviewers. I used tomato sauce and diced tomatos instead of the juice. Everything else I followed exactly. I would recommend if you are a bean lover, double the beans, as I thought they were quite sparse. I will definately make this again, but with more beans. I topped with cheese, sour cream, and chopped green onions. It is SO GOOD!

Haddock Au Gratin

I just made this last night. It is extremely delicious, but WARNING, it is EXTREMELY rich. Even using skim milk instead of half and half, it was almost too rich for me. Also, it was very salty. Next time, I will leave the step out that says to salt the fish. There is plenty of salt already because of all the cheese. The flavor is wonderful, but because of the calories & fat, I will not make this very often. Good recipie!

Chicken Enchiladas II

I am not a Latina, and don't hold to the "you have to use this kind of tortilla" school. I absolutely admire anyone who argues for ethnic correctness. But, I absolutely cannot STAND corn tortillas, so I would have made this with flour anyway. This was fairly easy, and when I licked the spoon, it tasted wonderful. I did follow the advice of others and do one can of cr. of mush, and one cr. of chix. Delightful. I am a sauce person, and this worked for me. Oh, I also used rotissierie chix- good comment there. Better than I could have made it. Thank you.

Black Beans, Corn, and Yellow Rice

I just made this for the first time. The rice was not cooked long enough (crunchy) so I suggest following the directions on the box then add the other stuff. It looked, smelled, and tasted yummy. But, after reading some other reviews who encouraged to add tomatoes, I decided to throw in my homemade pico di gallo I had in the fridge. OMG! I looked wonderful, and tasted just as good. Definately a keeper! Thank you for the base recipie and the suggestions.

Quick and Easy Taco Dip

I read all of the reviews, and one thing I noticed was how boring it looked (not tasted). So, just to make it pretty, I did not mix the salsa in with the cream cheese. I put in on top, then the cheddar, and I put green onion on top (personal preference). I don't like olives so I didn't add, but it would look nice. Bottom line- I made this for an outing. The only problem is, I have dipped into it at least 6-7 times. I am going to have to make another one to take out, as by the end of the evening, I am pretty sure this one will be at least half gone. Easy and yummy. I did follow one suggestion and double everything, but used one 8oz cr. cheese and one 8oz sour cream. I used a little more taco seasoning, but did it to taste. I can't believe I have been buying this at the store for BIG bucks, and now I can make it myself.
