Asian-Style Pork Chop Bake

This was my first time working with pork, so I followed the recipe pretty closely. However, I did end up marinating the chops overnight and until we were back from an appointment (almost 20 hours), which gave them an extra punch of flavor! They were tangy, citrusy, and overall spectacular. But I must say, the sauce does not thicken in the oven as stated; you have to thicken it yourself using cornstarch, which is what I did. I served the chops over whole grain brown rice with an Earth Balance-buttered red potato on the side. Definitely give this recipe a try- you won't be disappointed!

Cream of Celery Soup

I made this soup this evening, and it turned out well. I did, however, cut the recipe into about one-third the original serving amount; I also used more than two cups less broth than the recipe called for, and the soup still turned out a bit thin once I puréed it in my Vitamix blender... which was fine since we had a crusty baguette to sop up the soup. My recommendation is to sauté the vegetables (including some chopped/minced garlic, to your taste) before adding the liquid to the pot and heating everything through, as one reviewer stated earlier. And if you like your soup thick and creamy, remember to use less liquid and/or purée only part of the soup.

Greek Salad Pizza

I made this pizza tonight, and it turned out excellent; however, I did have to make a few alterations. I ended up using two (8-ounce) cans of Pillsbury® refrigerated crescent dinner rolls instead of one because one can did not provide enough dough. I also did homemade hummus, which I added after pre-baking the crust for eight minutes. I then added chopped, sautéed red onion on top of the hummus, along with the grape tomatoes, sundried tomatoes in olive oil (a great addition!), olives, and Athenos Tomato & Basil Crumbled Feta Cheese. Then, I baked it for an additional eight minutes. Perfecto!
