Kale and Cabbage Soup

I really liked this soup a lot and will definitely make it again. I originally tried it because I felt the need for some greens and all that kale and cabbage fit the bill! Like the previous reviewer, I was surprised to find it a tad bland considering all the garlic and spice, but I added some tumeric for colour and then a little onion powder and just under a tablespoon of apple cider vinegar and it really gave it that little kick I felt it needed. I wanted to try some ginger in it, but didn't have any on hand. And finally, I grated a generous amount of old white cheddar on top, and it tasted just great. Even my husband and my toddler loved it! Chef John's Buttermilk Biscuits

These biscuits were gorgeous and delicious. And since I try to eat a wheat-free diet, I substituted spelt flour for the white flour in the same measurement and they turned out beautifully. Chef John is fabulous! :)

Grilled Peaches and Cream

I really wasn't sure what I would think of this dessert, but I made it for a barbeque party this weekend and it was a real hit. I was amazed how lovely this combination tasted together. I used fresh juicy peaches and as someone else suggested, I put some chopped walnuts in a bowl for others to sprinkle over their peaches. (Not everyone is a nut fan, so I didn't put them on all the peaches.) As my husband and I were putting them on the grill, I said I'd prepared way too many, but they would keep in the fridge for later. Well, they were ALL gobbled up in no time flat! Such a nice alternative to sugary desserts that leave you feeling bloated and tired.

Classic Spanish Sangria

I really loved this Sangria although I made a couple changes to it. I only used 1 cup of rum and I added about 1-2 cups of Sprite as well. I also used more fruit including strawberries, peaches, oranges, maraschino cherries,apple, pear, lemon and extra lime. Also, it's tastes soooooo good with all that fruit, the sugar is just completely unnecessary, so I didn't use any at all. And I soaked the fruit in rum overnight as suggested by others. (And yes, the fruit tastes amazing after soaking, so don't let too many people taste-test it before adding to the sangria!) I also used orange juice ice cubes in the glasses as suggested by someone else. My guests raved about it and it was all gone in no time! As per the recommendation of the staff member at the liquor store I used Jackson Triggs Merlot red wine and it was delicious. I will definitely be making this again!

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo)

I really love this salsa. I just can't get enough of it! The only change I made was to add a diced yellow/orange pepper and it's amazing. The lime juice flavour is addictive and it goes great with my favourite blue corn chips. I like to make it when we have friends over for bbq's.

Oatmeal Waffles

WOW! These are truly amazing! I made pancakes from this batter and could not believe how delicious they were. They were fluffy and crispy and golden and sweet. I was afraid that with just a little molasses they wouldn't be sweet enough, but they have a gorgeous hearty flavour. And I love the additional flavour of the oats. All I did differently was to add some cinnamon, then I fried them in butter and topped them with some vanilla yogurt. Yum!! And I love that they are good-for-you with the use of whole wheat flour. These will be a family favourite for many years to come. Thank you!! :)

Garlicky Summer Squash and Fresh Corn

WOW - I couldn't believe how good this was! For the "yellow squash" I used yellow zuchinni and did everything exactly according to the recipe. (Although I don't think it needs a full 10 minutes of cooking after the veggies are all in the pan together.) It's amazing how much flavour this dish has - truly delicious! And it was very quick and easy. This dish could be paired with so many entrees and would be a great side at a barbeque. I really loved it and plan to make it again and again. Thank you!!

Fresh Tomato Salsa

I used 2 jalapeno peppers instead of the serranos and I included a sprinkling of the seeds to give it a little heat. It was SO fresh and delicious!! My husband and I gobbled this up in no time. I can't wait to serve this to guests and will probably double the recipe when I do.

Ginger Glazed Mahi Mahi

This was quite delicious and because I'm breastfeeding I checked to see if Mahi Mahi has high levels of mercury. It has "moderate" levels so I looked up fish that are similar to Mahi Mahi that have low levels of mercury and found: tilapia, flounder and white fish. I used tilapia and it turned out beautifully. My husband doesn't like a lot of sauce on things so I didn't pour the reduced sauce over his after it was cooked and it was still really nice. Just a note: be careful not to reduce the sauce for too long or it gets gummy in texture.
