Roasted Cauliflower

I like the basic premise of this recipe, but I like the cauliflower cut up and then placed in a plastic bag with marinade ingredients and shaken. The inside of the cauliflower tasted steamed when I cooked it whole.

Braised Corned Beef Brisket

I have been cooking corned beef for over 50 years. Thanks, Mauigirl, this is by far the best I have ever made. Used Baking Nana's method of triple-wrapping meat in heavy foil. Not only was the corned beef wonderful, the clean-up was so easy. I had a lean piece of meat from Costco that was perfectly square so it cooked evenly. I poured the broth into a gravy/fat separator. I was surprised how little fat came to the top. I will be making this again and again.

Potato, Broccoli and Cheese Soup

This is a wonderful recipe. I added two finely grated carrots for extra nutrition and used chicken broth instead of bouillon cubes and water. An immersion blender works very well with this recipe. I added more small chopped broccoli after blending other ingredients. When we reheated the leftovers we added chopped ham.

Sourdough Croutons

Love this great recipe! Only problem I had was how much is 6 slices bread? Size of bread varies, as well as size of slice. But it didn't stop me from making these wonderful croutons.

Lebanese Lemon Salad Dressing

This is the only salad dressing we use. We add french bread cut into 1/2" cubes to the salad. The bread soaks up some of the dressing. We use Romaine lettuce and add grated parmesan cheese and cut-up anchovies. It is simply the best and inexpensive to make.

Hot Corn

Love this recipe, but like others I halved the butter, milk and cream cheese. I used 6 cans of corn. I made it to serve 23 people on Thanksgiving so I used pimientos and canned Ortega chiles rather than Jalapenos (which I would have preferred). What is so nice about it is that it tastes better the next day so I made it on Wednesday and baked on T/G.

Cuban Ropa Vieja

This is an excellent recipe. I tweaked it a bit by adding a red pepper in addition to the green pepper. (Peppers should be cut into 1" squares rather than strips) I also used four cloves of garlic and about 3/4 cup of sliced pimento-stuffed green olives. I found it took approximately six hours to cook on high because I had used chuck roast cut into pieces because the store did not have flank steak.

Balsamic Salad dressing

At last I have found the perfect salad dressing! Used V8, splenda instead of sugar, and since packaged Italian dressing mix has so much sodium I used mixed Italian seasoning.

Spicy Eggplant

Great recipe! I added mushrooms, red pepper strips and cherry tomatoes. Used everything but oyster sauce to keep vegetarian. Served over ramen noodles (without seasoning packet). I used Rosa Bianca eggplant from Farmers' Market. It has a wonderfully firm texture and not watery as regular eggplant can be. Can't wait to have again.

Yam Smoothie

Wonderful recipe. Used pumpkin pie mix (it's impossible to find plain canned plain pumpkin) and honey instead of sugar. If I use yams I will ad pumpkin pie spice. Everyone loved this!!!
