Dijon-Tarragon Cream Chicken

I made Emrils version , his uses wine. But I made quite a few substitions because I used what was on hand. It was delicious. I used sake instead of white wine, basil , sage and spike (a combination spice ) and half and half instead of heavy cream. also mixed olive oil and buter.....it was fabulous !

Crustless Spinach Quiche

This is awesomely scruptious ! I added turkey bacon bits and sundried tomatoes. In the picture on this recipe it looks like they must have left off an ingredient (see the red?) looks like red bell pepper...so that would be good I think. I didn't EVEN miss the crust it is so good.

Caron's Kickin' Quinoa Salad

I took this to a group dinner and most everyone liked it alot. I had to add much more of the wasabi powder, maybe it was because I had this in my pantry for quite some time and it has lost it potency. I added carrots that I chopped in the food processor and wanted to add cucumbers just before serving , and ginger,but forgot. Also added a little soy sauce. I'd like to try it again using wasabi paste,the cucumber and ginger.

Italian Sausage with Farfalle and Broccoli Rabe

This was very good, but I think the broccoli rabe could be substituted with spinach or maybe regular broccoli, since the other flavors pretty much overwhelm the taste of it. I don't really like the flavor of the broccoli rabe by itself anyway. I used hot italian turkey sausage and was able to leave off the crushed red pepper,added extra garlic,left out the butter. Didn't have parmasan so that was left out, but I'm sure that would be good just take into consideration the saltiness of it. Good recipe !

Butternut Squash Ravioli with Sage-Brown Butter Sauce

I love butternut squash any kind of way. I made this with already prepared butternut squash ravioli. For the sauce I used the butter and sage (bottled) but also added a little ginger (fresh in sqeeze tube) and buttermilk! It was fabulous ! also added a little powdered garlic. YUM!

Spinach Lasagna III

This was awesome! I used the no boil lasagna, but think I will use old fashion kind next time as it seemed to soak up the pasta sauce a little too much on the leftovers. I also used porta bella mushrooms, they are a little meatier and used romano cheese instead of parmasan (too many different cheeses to buy) I used 2 boxes of frozen spinach instead of fresh.be sure to squeeze out the liquid.

Southern Turkey Cornbread Pot Pie

This was mediocre at best. I added celery, onions and carrots, but it was still just not "all that" I like the idea of the cornbread topping, (I put actually cornbread batter on top)maybe I will make it again using the usual pot pie veggies and maybe doing a from scratch filling

Chicken Spinach Quiche

This IS the best quiche I have ever tasted ! I added some leftover mushrooms that I had previously sauteed in butter. I think next time I will add a little less milk and another egg since it took the full 45 mins to get firm even on speed bake and the edged got a little too brown. also added a little more salt (sea salt)

my friend made this for a church christmas party, and it was scrumptious! She left out the raspberries and added more strawberries instead! it was so refreshing a good for you too!
