Sopapilla Cheesecake Pie

This was disgustingly sweet as is. In my opinion, there is just WAY too much sugar in it. And I like sweets, so that's saying a lot. I will be looking through other reviews and modifications, but I will be cutting way back on the sugar.

Slow Cooker Pulled Pork

I am not big on using my slow cooker, but this recipe has me getting it out more often. It could not be easier or the taste more perfect! I have a large slow cooker and made a 6-lb tenderloin in it, by cutting it in half. I didn't measure the soda, just covered the tenderloin with it. It took about 12 hours to cook. Everyone at our BBQ RAVED about it. I got over 24 servings with all that pork!

To Die For Blueberry Muffins

WOW. For once, a recipe name with a hyperbole in it doesn't stretch the truth! These muffins truly are to die for!!!! Based on other comments I used brown sugar in the crumb topping instead of white sugar. It made 12 regular muffins, baked for 18 minutes. I will be making these again and again and again....

Sam's Famous Carrot Cake

I didn't think this was as awesome as other reviewers did. I made the recipe almost exactly as written but omitted the coconut and added 1/4 tsp of nutmeg. I baked it in 2 9" round aluminum pans with straight sides and it was done in 35 minutes (another reviewer said 45, so I am glad I checked at 35!). It was very good but not a wow. Just too much going on. My son, who LOVES pineapple, didn't like pineapple being in the cake. My husband and I didn't care for the raisins. It wasn't overly sweet; I actually would have preferred it to be a little sweeter! I will try it again without the pineapple or raisins, but will likely try other recipes as well. It was very good, just not a wow or something I can see myself making again and again without some major revisions.

Whipped Cream Cream Cheese Frosting

Fantastic!!! I made this exactly as the recipe was written, and it's to die for! We were all fighting to lick the bowl. I used it to frost a carrot cake and it was the best part of the cake. I love that it's not too sweet. I will be making this again and again.

Shrimp Scampi V

I made this tonight, with the only difference being that I used cooked shrimp. It was pretty tasteless! No one really cared for it. Not sure what all the rave reviews are about, but I'll be trying another recipe next time.

Pineapple Pork Chops

As others did I reduced the soy sauce to 1.5 tbs and I sprinkled in some garlic powder. I also tossed in a can of pineapple chunks during the last step. Overall, this was very tasty, and a bit tangy. Reminiscent of a sweet and sour Chinese dish with a pineapple flavor instead of an orangey one. My husband said he really liked it but wouldn't want to eat it all the time, and that sounds about right to me!

Cinnamon Belgian Waffles

Yum! I didn't have buttermilk so I made my own: 1 tablespoon of lemon juice plus enough milk to equal one cup total. Let it sit for 10 minutes. I also used 1/2 tsp. of cinnamon instead of a pinch, but it could have used more and wouldn't have been overpowering. I actually doubled the recipe for our family of 5 and it made a total of 8 waffles. Topped them with whipped cream, a Nutella/milk sauce and strawberries. My son loved it as his birthday breakfast! Yummy, yummy, yummy!

Herb Batter Bread

Easy and yummy! As others suggested, I used olive oil instead of shortening, and I added 1/2 tsp. garlic powder. I didn't have rosemary, so I used oregano (we were having it with my homemade spaghetti and meatballs, and there is oregano in the sauce), and it was very tasty. Everyone loved it! Word of caution: don't use a handheld mixer! When I added the third cup of flour it nearly burned the motor out! I will use my food processor next time. I am also going to try sea salt/kosher salt instead of table salt next time as well. Mine was done in 38 minutes but would have been ok at 40.

Peach Pie the Old Fashioned Two Crust Way

OMG, this is the best pie I have EVER tasted!!! I did two slight modifications: I used half white sugar and half light brown sugar, and I backed off a bit on the nutmeg. I also poured the peaches into a colander and gently shook it after coating the peaches with lemon juice, to get the extra liquid off. It was PERFECT and worth the hassle of slicing 8 large peaches!
