Cabbage-Carrot Casserole

This was great! Very easy and all items I had on hand. I sprinkled fresh tarragon on the top which was a nice edition.

Sweet and Sour Drumettes

Very good! I actually made this with chicken breasts instead of drumettes and it was awesome. I sliced two breasts into about 3 filets each and basically followed the directions, changing only some ingredient amounts here and there. I only used one egg, 2 tablespoons soy and 4 tablespoons water. I also cut down on the sugar. Actually I used agave nectar in lieu of white sugar and cut down on the amount by roughly 1/2. I also added some Chinese Five Spice, cayenne pepper, and sweet chili sauce (like another reviewer had suggested). I fried the chicken as it called for, prob not for a full 15 mins, transferred to a baking dish, poured the sauce over and added some sliced zucchini and put in the oven for the said time. It all turned out so good! Definitely RQ baby (restaurant quality) as my husband says.

Island Okras

Very very good and incredibly easy. It's true okra sliced this way is not gooey. I decreased the amount made and the onions and garlic were near carmelized but it only added to the delicious taste of the dish. I did add more garlic than called for but that was really the only change I made. I will definitely make again!

Cool Cucumber and Avocado Salad

Easy, healthy and delicious! This was a great recipe and forced me to learn how to zest. It's not hard at all! I followed the recipe except held the red onions. It turned out fabulous!

Tempeh Ratatouille

Very good! I used shredded mozzarella in lieu of pepper jack and it was great! I'm not much of a cheese person but I thought the cheese made it. I loved all the veggies and tempeh and let everything simmer much longer than the recipe called for and I think this helped with the flavor. Additionally I added cumin, lemon pepper, fresh basil. The hubby liked so I will definitely make again!

Garlic Chicken Fried Brown Rice

Okay I know I didn't follow the directions that well so I assume it's my fault that I'm not super impressed with this recipe. Also I'm really not much of a fried rice fan. I just happened to see this as the daily dish and thought hmmm sounds good and I have chicken in the fridge. With that said, this is what I did which I would say refrain from.... I didn't have any cooked rice on hand so I did make some (brown) from scratch. I then cooled the rice off before using. I did not have a bell pepper so I didn't use. Instead I used green onion, yellow onion and carrots. I chopped all. But I think the biggest mistake was using canned peas. For this step, please follow the actual recipe. I guarantee it will turn out much better than mine. Another mistake was using Tamari soy sauce rather than light. I think that tamari is even lighter than light soy. I also did add an egg, which I can't even taste. On a positive I added ginger as did some other reviewers and I think that it added a nice flavor. Once again I'm not normally a fried rice eater, so I'll have to see what my husband says when he gets home.

Greek Lemon Chicken Soup revised

I decided to use the revised recipe after deciding I was going to 1/2 the original recipe anyway. It was very good. I used 1/2 the chicken the revised recipe called for (which was actually the same as the original) and I'm happy I did. This soup is very rich and filling. Otherwise I pretty much followed the recipe, the only other thing I changed was I added just a tad more lemon juice. My husband thought the soup was good but a little too lemony, but compared to the Greek restaurants where I've had this soup I didn't think so at all. Next time I make this I don't think I'll add quite as many vegetables.
