Slow Cooker Dump and Go Cheesy Chicken

Wonderful recipe. I put it on this morning and it really smelled good when I walked in after work. It was wonderful. Served it on rice. Only addition was I added a small can of green chiles. Delicious and my family loved it.

Hamburger Supper

HHHMMM Good! I am sure it is fabulous the way the recipe is, but I took the advice and used minced garlic and cayene pepper and it was wonderful. Also, I used onion soup mix because I didnt' have brown gravy mix in my pantry. Great dinner and quick.

Creamed Corn

Used fresh cut off the cobb corn from last nights meal. We roasted corn and I used the left over corn on the cobb. Cut it off and used recipe. Reminded me of my grandmothers cream style corn in the 1950's!!! Fresh out of the garden. She probably used fresh cream but the taste was there. Loved it!

BBQ Pork for Sandwiches

Everytime I make this I get rave reviews!!! And so easy. I always use a pork loin. I toast the hamburger buns in a skillet, slice up some fresh sweet onion and put on the plate with a dill pickle spear. My husband likes some sweet relish on his sandwich and serve with either potato chips or cole slaw. 5 star all the way.

Mexican Wontons

I am laughing on this one! I could not find won ton wrappers so I used fillo dough instead. It worked out but they were not very pretty with my artistic fillo dough wrapping, but the flavor was great and I got glorious reviews from everyone on the taste. I took some others advice and added chopped up jalapeno sausauge links, some green chiles and fine grated cheese. Served with chipolte sauce and guacamole. Will make again and try to find the won ton wrappers next time so they will look better!! But the fillo style tasted great!

Fried Bologna Casserole

Just made this for my husband for dinner and he loved it. We are about to leave on a trip and didn't have a lot of food in the house, and found this recipe and I had the ingredients to fix it. I am not a a big fan of bologna but it was very good. Made an avocado tomato salad and used a little Louisiana Hot Sauce as a condiment and it was a great quick supper.

No Time to Cook Chicken

Great basic recipe. You can make it your own or prepare as is. I added chopped onion and a can of green chiles and dash of red pepper. Serve over crisp fried tortilla with grated cheese on top with a side salad or guacamole or crush a few tortilla chips and add the last hour or torn flour tortilla....sprinkle with cheese and serve. Crock pot version of King Ranch casserole. Yummy

Carolina Fish Cakes

Delicious! Served over a bed of cajun rice and just drizzled a little Rotel Cream Sauce on top. Great meal. Only difference was I didn't have bread crumbs and used Zatarain's Fish Fry meal to coat and then pan seared in olive oil.

Bacon Pie

Very good! Halfed the recipe for my husband and I and used cheddar instead of swiss because it was all I had. Baked it less time because of the half recipe. Sprinkled a little grated cheese on top when still hot from the oven. Served with a spoon of lite sour cream on the side and Louisiana Hot Sauce. Very very good.

Jalapeno Poppers I

This recipe was wonderful. We had a couple over for dinner and this was out appetizer. The only little change was I added a little more mayonnaise. The baking makes this so healthier than frying and I rubbed a little olive oil on the baking pan. Easy and tasted wonderful!

Apple-Stuffed Acorn Squash

Loved this. I scraped it out of the squash mixed all and put in a baking dish and adjusted to just one acorn squash for my husband and I. Delicious. Also microwaved the squash for 10 minutes cut in half in 1/4 cup water. Saved time and scooped right out! Awesome recipe.

Fresh Tomato Chili Sauce

Reminds me of my Grandmothers recipe I helped her make with fresh tomatoes from her garden when I was a child. Wonderful with fresh cooked purple hull peas or baked in a meat loaf. If you will blanch the tomatoes in boiling water for about a minute and then put in iced water, the tomatoe skin just slides off.

Delicious and so easy!! Only change was just because of supply, I used Cilantro instead of Chipolte. This is a great quick supper. Also used picante sauce that was garlic and onion flavored.

Real Chiles Rellenos

Just finished cooking this wonderful recipe and eating it! Amazing! Perfect texture on the batter, flavor is wonderful, and the sauce is just what it needs. Added a little sugar to the sauce (1-2 teaspoons) Just the right little zip to the taste. I also used Rotel Tomatoes for the stewed tomato for some heat. My husband is on his second one and loving it! Served with refried beans with cheese sauce and chipped onions on top. Will make this many times in the future.
