About this Cook
I love to bake. Its exciting to experiment with different recipes and to see the results. I try to find the best recipes but I always look for more, never being stuck on just one recipe.

Russian Tea Cakes I
These are surprisely delicious!! After lunch, I was ready for my dessert. I picked up this tea cake and it was like I never even took a bite. It kind of melted in my mouth. It was so good! The dough was NOT crumbly at all. Maybe it was because I softened my butter a lot (not melted) in the microwave. I think next time I will leave out 4 tablespoons of butter just to save on some calories and add milk if needed. Also, use a tablespoon to scoop out your dough to get the exact serving size.

Best Big, Fat, Chewy Chocolate Chip Cookie
These are so good and delcious! It's one of the best large cookies I've had. But I recently made a cookie recipe larger than this and soft chewy but crunchy on the outside. Try the "extra large soft chewy chocolate chip cookies" http://allrecipes.com/PersonalRecipe/62438531/Extra-Large-Soft-Chewy-Chocolate-Chip-Cookies-Cookie-Madness/Detail.aspx

Light Chocolate Chip Cookies
I would rate it four stars if these cookies owned uo to their name, "light." These cookies are okay, pretty good. They were chewy and not too thin. I used 5T butter and 1T applesauce. I also omitted 2 T white sugar. I used 1 1/4 cups all purpose flour and 1/4 cups whole wheat pastry flour. I only got 17 cookies using a 2 tablespoon scoop. That means if you followed this recipe exactly using a 2 T scoop, each cookie would be about 150 calories! Now these are okay for cookies but not "light cookies." Go to award winning soft chocolate chip cookies and they taste so much better with 177 calories each. You can make those cookies 150 each by replace 1/4 of the butter with applesauce, they still tastes like the best cookies ever!
