Curried Quinoa

Really, I give this recipe a 4.5. I followed the recipe as is, except using regular chili powder b/c I did not have ancho chile powder. Regardless, it was very good and I will definitely try this recipe again, adding some veggies and chicken next. Definitely a keeper in my book!

Good Old Fashioned Pancakes

Good-Morning Banana Nut Cereal

Excellent recipe and so delicious. I have made this with the bananas as called for and also with blueberries. Both were wonderful and I'm so glad to have a new recipe with quinoa in it!

Bellyful of Barbecued Bananas

Holy cow! So good! I made this on the stove (even though I prefer grilling) and it turned out amazing. I have also added unsweetened coconut flakes and semi-sweet choc chips which also turned out delicious. Better than many restaurant desserts!

Six Can Chicken Tortilla Soup

With some extra seasoning this is one of my favorite recipes! I can make this and eat on it for a few days for lunches at work. I use one can of chicken broth and 1 chicken bouillon cube (adding about 3/4 c water). I prefer the petite cut tomatoes with jalapenos. Many times I'll add some diced onion. I always add red cayenne pepper and cumin for some extra flavor. Such a simple and excellent recipe. I'm sure I'll make it forever!

Buttery Lemon Spinach

I sauteed the garlic in the fresh squeezed lemon juice and salted butter. Then added the spinach. ABSOLUTELY AWESOME! I couldn't eat enough! I made it again for dinner the very next night.

Sweet Potato Casserole II

This could've almost been dessert! Wonderful dish. I made a few changes. I substituted 3/4 cup of pure maple syrup in place of the 1 cup of white sugar. I baked in an 8x8 casserole dish and baked for about 35 minutes. The topping was perfect and crunchy!

Blackberry Cobbler II

Double Layer Pumpkin Cheesecake

My husband said it was the best thing I've ever made! I added a little extra vanilla and doubled the spices. Very simple to make. It was absolutely perfect and I plan on making this recipe for many years to come!
