Oklahoma Nut Candy

When I put the melted sugar into the cream and sugar mixture, the melted sugar became one big lump. Perhaps the other mixture wasn't warm enough. However, I kept at it stirring until it all smoothed out which took some time. Good result.

Alabama Pulled Pig

This is an excellent recipe. We are from Texas where the extra kick from the cayenne pepper is appreciated. We do not add the butter. We use a green egg for the first half, using mesquite wood. We baste with apple juice during this phase. We put it in the oven for the second half. Finally, we do put it back in the oven after it has been pulled and drench it in sauce so that the flavors all come together. Great every time.

Avocado Feta Salsa

I used previous suggestion and added cilantro instead of oregano. Then grabbed blue cheese instead of feta by mistake. After a slight panic, tried the recipe and it was fantastic. Recipe is very flexible. Took to tailgating party with baked pita "chips" and was a big hit.

Bacon and Potato Soup

Loved this soup. I did make a few changes - added garlic, deleted cheese and, because I served this for New Year's Eve, added fresh black eyed peas. Many compliments. I did use precooked bacon as well.

Miki's Jicama (Pico de Gallo Salsa)

I really liked this recipe. I made 1/4 of recipe as i did not need too much. Still had left overs from side dish. I served with grilled chicken but would be great with tilapia or fish tacos. I am from texas so added more jalapenos but only because they are mild now in winter. Also added another tomatoe (4 if it was full recipe). Might have been size of romas though. I think the fine dicing is critically important. Am thinking of adding cabbage to this recipe and serving as slaw with some additional tweaks. Very good and a bit different than the norm

Easy Cocoa Ice Cream

I made this recipe and left my son stirring for a while. I came back and thought it was ruined. Very thick and lumpy. I almost threw it out but decided to give it a try. I whipped it all up with beaters until it was smooth and skipped the cool down step. It was fantastic. So many compliments young and old.

Stromboli

This has become a weekly meal for our family. I use the bread machine dough recipe included in these reviews. However, I use 2 tsp instead of 2 Tbsp of yeast. This is a very easy and quick meal that kids love.

Mexican Hot Chocolate
