Baked Chicken with Salsa and Sour Cream

Reviewed: Feb. 1, 2013
This recipe has become a staple in my house, I don't even follow the recipe, but make from memory because it is that easy and forgiving, and I often make my own taco seasoning. Both my 5 yr old and 2 year old sons eat this right up. I pair it with homemade Spanish Rice mixed with some vegetables and dinner is made easy.

Ten Minute Szechuan Chicken

Reviewed: Jul. 6, 2012
I make this dish often, as it is simple to make and my whole family eats it well. I ALWAYS add ginger and shredded carrot, and have added other veggies I have on hand, and it is still very good. I hate to only give it a 4 star, but the addition of ginger and carrots, in my opinion, make it a 5 star rating. Be sure to use low sodium soy sauce, or it will be very salty and I do make a little extra sauce, since I put it over brown rice. I am a cook, not a chef; this recipe is very lenient to that fact that I rarely measure out ingredients, but add by sight.

Bella's Rosemary Red Potatoes

Reviewed: Mar. 28, 2011
So simple and, yet, so delicious. I think I will use a little less butter and oil next time, just because I don't think it needed quite so much, but other than than, I will do this recipe often just as it is.

Pork Tenderloin with Creamy Herb Sauce

Reviewed: Mar. 28, 2011
This recipe is FANTASTIC!! Simple, readily available ingredients, and so delicious. I used Half and Half instead of cream, and I added minced garlic to the sauce. Husband agrees that adding cashews would add a delightful texture to this dish; although only when we are splurging as it would add quite a bit of calories and fat. My three year old son ate it up and wanted more. I made extra sauce, although I'm not sure it was necessary; I used the sauce to flavor my steamed asparagus; yum! I added the ingredients by sight, instead of measuring and it still turned out wonderful. I paired the pork with roasted rosemary red potatoes and will do that again. This is a simple recipe that I will use when I am cooking for company.
