Grandma Jeanette's Amazing German Red Cabbage

Excellent--but I dropped the salt to 1/2 teaspoon...cooked it in the pressure cooker for 5 minutes after jiggle. Let stand another 5 then reduced the pressure. So good!

Slow-Cooker Chicken Tortilla Soup

I thought this was fantastic. I used a 7 oz can of green chilies and 4 frozen chicken breasts--took them out and shredded them towards the end. I added the corn and cilantro at the very end. Super. We loved it. EASY, too!!

Pressure Cooker Chili

This is my favorite chili recipe. Today I made it Vegetarian by switching 1 16oz bag Morningstar Recipe Crumbles for the hamburger. I just sauteed the onions, green pepper and garlic, then stirred in the Crumbles with everything else.

Super-Simple, Super-Spicy Mongolian Beef

I thought it was great! We love spicy, so the 1 Tbl red pepper flakes was great, but if you aren't all over spicy, then you should cut back on the dried red pepper. I added veggies (thinly slices red, orange and yellow peppers and broccoli) to make it more of a meal. I would add a little cornstarch the next time to thicken up the sauce a little. I kept looking back at the recipe to see if I had missed it...

Amazing Pecan Coffee Cake

I halved this recipe (baked it in an 8x8). Further, when I went to get my sour cream out of the fridge, I didn't have any--the only thing close was LIGHT (fat free, no sugar) pina colada yogurt. So I subbed. Then because I had an apple that I had dropped on the floor the day before which needed to be used, I sliced that very thinly under the topping. WOW! This was SO SO great.

Turkey Breast with Gravy

This was SO perfect. I did have a little trouble getting the breast to stand up with the onion and celery "inside" it. And, also I only baked until my meat thermometer got to 165....after taking it out and letting it stand it had risen to 180 (I looked this up on Emeril's site). It was absolutely perfect. This was the first time I didn't use a turkey baking bag...

Green Bean Bundles

I could have eaten this whole dish by myself! I actually didn't do the bundles--I put my beans in the microwave with 1 Tbl water covered until they were crisp tender--about 7 minutes for me (will depend on the amount of beans you have). Then I sauteed the onion in about 1 kitchen teaspoon of bacon grease, threw in the steamed green beans and then put the white wine vinegar, sugar and salt mixture over them all. They were SO SO SO delicious!

Chicken Jambalaya I

We really liked this a LOT! I cooked it in the pressure cooker for 5 minutes rocking slowly, and let it drop pressure on it's own. I used 1 cup rice and just filled the diced tomato can with broth. It seemed perfect. I cooked my bone in chicken breasts in some water, celery and onion while I started making this, and it was perfect the way it worked out.
