Grandma's Green Bean Casserole

Made this for Thanksgiving....my crew ate it but i found it to be a little bland. The cheese flavor just didn't come through like I thought it would. The rating is for my preparation....great recipe!

Brown Sugar Meatloaf

My first time making meatloaf.....LOVED IT!! The topping got stuck in my teeth though....too sweet? No such thing in my book!! I forgot the milk in my recipe so I can't fault the recipe for it being "stiff." All in all, I will be making this again before I try any other recipe....with the milk.

Pretty good salmon!!! I had plain old regular honey so that's what I used! Still super yummy, had a sweet flavor throughout the entire fillet!! I think I might add more seasoning next time but still a really good recipe! Thanks a lot, I love salmon and am always looking for new ways to make it!!!

Quick and Easy Fish Tacos

Yummy!!! My family loved these tacos! I would've preferred a little sauce and tried to create one but it didn't turn out right! Not enough ingredients on hand to make a decent sauce as we were on vacation. We just ended up using salsa! Super yummy though, give it a try!

Fettuccine with Sweet Pepper-Cayenne Sauce

This was terrific!! I love cheese! I followed the suggestion of another poster and reduced by low-sodium chicken broth by 1/4 cup and it was not right! Mixed pasta and sauce turned out dry on the top and no one likes dry pasta! That was my fault though....I will try it again with the full 3/4 cups of chicken broth, I think it'll be perfect! I also omitted the cayenne sauce because my 8-year old nephew was eating it. He loved it! Delicious sauce! I used low-fat sour cream, so yummy!

Taco Pie

One word.....WINNER!!! My family loves my version of this recipe! Great idea! I used ground turkey instead of beef and added taco seasoning, rotel, and red onion to the meat mixture while I was browning my crescent rolls. After both were ready, I added low-fat sour cream to the already cooked meat then poured meat mixture onto the dough. Topped with cheese and crushed tortilla chips and put in the oven for about 10 more minutes. We topped with shredded lettuce, fresh diced tomatoes and salsa. Yumm-yumm-yummy!!! Next time I am considering layering my meat mixture with black beans or perhaps pinto beans and then topping with the cheese & chips. We'll see how it turns out! I'll be eating it either way! This one's a keeper for me!

Broiled Tilapia Parmesan

I made this while on vacation for my extended family. They LOVED it and they are NOT fish eaters! We were at a time share so we didn't have all of the ingredients. We used low fat mayo but real butter, salt substitute, black pepper, Old Bay, & lime instead of lemon juice. No basil or celery salt, we didn't even have onion left by the time I made it! They still loved it! I mixed fresh bread crumbs, because that's what we had, with the topping ingredients and the topping still turned out great! I suggest bread crumbs every time, they hold a bit of the cheese flavor in! We had an electric oven so I cooked the fish without the topping further away from the heat, then after adding the topping, cooked it close to the heat. Texture was perfect, still juicy but firm and perfectly done! I have gas at home so I'll have to see how it'll work at home but all in all, great recipe!!! You can modify it to suit your tastes like all recipes so give it a shot!
