Butternut Squash Soup

Very easy to make, especially after following the advice of other cooks on here to roast the halved squash in the oven first for an hour at 350 degrees. I only used 4 ounces of cream cheese, and it was plenty. I did not have cayenne pepper on hand so I substituted chili powder and a little bit of crushed red pepper. I added some porcini mushroomand thyme ravilois after cooking and it was so yummy!

Tomato Basil Pasta

How can you ever go wrong with tomato and basil? I used cubes of mozzarella instead of parmesan or feta, added a teaspoon of balsamic vinegar, and some crushed red pepper flakes. It was delicious!
