High-Fiber, High-Protein Breakfast Bars

Thanks so much for this recipe--we love it! From the ingredients I was pretty confident it would be a hit, so I doubled it the first time out and baked in a 13x9 glass dish lined with foil as recipe recommends. I baked at 350 for 30 min, then another 10 for the peanut butter topping. Perfect! The changes I made were to use multi grain oatmeal type cereal, not the quick oats; natural peanut butter, no salt, agave nectar instead of sugar, and I used a blend of hemp hearts, milled flax seeds, and chia seeds instead of flax and wheat germ. I just cut them up and put in plastic bags in the fridge so they're easy to grab and go. One Note: don't be afraid of the peanut butter topping--it just cooks into the bars and isn't messy at all.

Baked Kale Chips

Have to add my 2 cents here! Read all the reviews last nite. Washed dinosaur (lacinato, tuscan) kale ahead of time so it was completely dry, tore into potato chip size pieces, tossed with 1 t (not 1 T)olive oil, couple pinches of creole seasoning, and a healthy amount of nutritional yeast (for the cheesy umami flavor). Squished it around with my hands to coat everything evenly. Using insulated pans, first batch took 12 min; once the pans were hot just about 10 min at just slightly below 350. Perfection! My garden is giving me kale like crazy, so I made 4 2 pan batches. At $6 for a small bag of kale chips at the store, I have about $60 worth!

Coconut Macaroons III

I make these without the flour and salt which are unnecessary, and the addition of 2 well beaten egg whites. I like them golden, so they seem a bit too crunchy at first, but if you put them in a plastic bag they soften up perfectly. If you like, drizzle or partially dip in chocolate.

Jalapeno Poppers I

I read all the reviews about these, and since the jalapenos I had were very meaty, I opted to blanch them for 2 min like some readers had suggested. Omitted the mayo, using just cheddar and cream cheese, and used panko crumbs for extra crunch. They were awesome-I wouldn't change anything further. I assembled them one day, dipped battered and baked a couple days later. Next time I will make a bigger quantity to have some to freeze for later. Also served them with a sourcream/salsa dip.
