Spiced Hot Chocolate

Good flavor with a warmth that stays with you. My cups are closer to 15oz so I had to double the cocoa, sugar and vanilla. I also left out the cloves. No one in my family likes them. A trick I do to get rid of the particles that don't dissolve is to pour it through an angled metal coffee filter. This makes for a much nicer presentation if you are serving company.

Plantain Corn Muffins

These were very tasty but a bit on the sweet side for my taste. I will cut back on the sugar next time. Thank you for adding yet another fantastic way to use plantains. In a Cuban/French/American household, you can imagine how many different ways we use them already.

Banana Split Bread

This is a very good and very simple recipe. It is however too sweet even after cutting the sugar by 50%. Next time I make it I will replace the chocolate chips with raisins. I added some trail mix instead of pecans this time and the bits with raisins was great. Thanks for the recipe.

Butter Bean Burgers

This is a great recipe to use as a guide. I changed the ingredients to match our taste and what was on hand. My wife loved them! Here is what I changed. The rest was the same: 1 can chick peas (butter beans) 1/2 tsp of onion powder (fresh) 3 Tbls Italian bread crumbs (saltines) 1/2 tsp crushed red pepper (jalepeno) 1/4 cup olive oil (veg. oil) I cooked them in a non stick skillet with just 2 tbls of olive oil.
