Garlic Chicken

This was DELICIOUS!! So simple to make and a crowd pleaser to boot! The chicken was so tender and juicy, which blew my mind as I always tend to dry out chicken breasts when I bake them. The only (and I mean ONLY) changes I made to this (I just couldn't help myself- I always make changes) was to add a little bit of Italian seasoning and garlic powder to the bread crumb/cheese mixture. I would've used Italian bread crumbs but I didn't have any on hand... I served these with garlic mashed potatoes, and while we all had garlic breath for the rest of the night, man was it worth it.

Candied Carrots

I left out the black pepper and added a dash of nutmeg, and they were a huge hit! The kids loved it (even the 2 year old!)To leave out the slicing and dicing I just used baby carrots and cut the original cooking time to 15 minutes. Perfect!

Good Old Fashioned Pancakes

These were amazing!! Like others, I left out the salt (my boyfriend has high blood pressure) but I made a few other tweaks as well. I added about a tsp of vanilla, a little cinnamon, a dash of nutmeg, chocolate chips, and bananas (after you pour the batter into the skillet just add the sliced bananas, when you flip they sorta bake into the pancake). OMG were they amazing. I warmed up the milk before I added the chocolate chips so they melted INTO the batter before cooking, so they were deemed "Crazy Trippy Amazing Chocolate Swirl Pancakes". Hehe. This was my first time making homemade pancakes and I'm never buying mix again. I'm actually gonna mix the dry ingredients together and store in tubberware to make my own mix to make these easy pancakes even easier for weekdays

Absolutely Fabulous Portobello Mushroom Tortellini

I made this as a quick dinner last night, and I was not disappointed! I added red peppers, zucchini, and extra garlic to give it a little more and if I make it again I'll be adding even more veggies and perhaps cutting down the portobellos (I found there was just a little too much). I wasn't disappointed with the Alfredo sauce I used, but I did splurge on the "good stuff." Big hit, the boyfriend said "oh, this is what tortellini is SUPPOSED to taste like!"
