Chicken Marsala

So easy and sooooo good! After the first try, I cut down on the marsala to 1/4 c and add some white wine to make up the volume. Served with egg noodles or with Uncle Ben's Long Grain and Wild Rice, it's a winner, for family or for company. Made it last time with Crimini mushrooms (always use extra mushrooms) and some leftover Portabella stems. Yummmm.

Flatlander Chili

Very heavy on the tomato, this one. I added more beans and some beef broth to try to bring down the over-the-top tomato taste, and it helped. Will be looking for another recipe.

Slow Cooker Chicken Taco Soup

I make this with chicken broth instead of beer, and one can of tomatoes with chilis, (adding a an of crushed tomatoes instead) and my family love it. Make it often when it's chilly outside or just when I need a no fuss, yummy dinner. We grate sharp cheddar cheese for a topping and serve with corn chips. I'm making it again today!

Easy Pepper Steak

I have made this several times using venison cubes and peppers out of our garden (green bell peppers and sweet Italian fryers) and it has become a family favorite! I usually serve it with Uncle Ben's Long Grain and Wild rice, the flavors just go very well. Mushrooms are a good addition, as are water chestnuts, and pierogies make a good alternative to rice.

Easy Batter Fruit Cobbler

Doubled this and made it in a 9x13 with 4 cups of blueberries and about 1/2 c bing cherries. Yum! Added about 1/4 t nutmeg, because we like nutmeg with blueberries.

We loved this recipe! I found a recipe for spoon bread that is supposed to be "Thomas Jefferson's recipe" and served this soup over the spoon bread--reminded us of our vacation to Gatlinburg, TN! Yum.

Buttermilk Honey Wheat Bread

My husband and my 4 year old liked this recipe better than other wheat breads I've tried, it has a lighter texture and the buttermilk and honey give great flavor. A new favorite! According to one of the notes, I made one and a half recipes for 2 loaves, and they were small enough that I will just double it next time. I don't see any danger of overflowing the pan; I used one packet of yeast, not the measured amount, and think this would be fine for 2 loaves. Still raised fine.
