My favorite things to cook
Soups as soon as there's a chill in the air! I do a turkey 3 or 4 times in a winter, and never less than a 20 pound bird, I love the leftovers, sandwiches, soups and other dishes that can be made from the leftovers.

Chicken Marsala
So easy and sooooo good! After the first try, I cut down on the marsala to 1/4 c and add some white wine to make up the volume. Served with egg noodles or with Uncle Ben's Long Grain and Wild Rice, it's a winner, for family or for company. Made it last time with Crimini mushrooms (always use extra mushrooms) and some leftover Portabella stems. Yummmm.

Flatlander Chili
Very heavy on the tomato, this one. I added more beans and some beef broth to try to bring down the over-the-top tomato taste, and it helped. Will be looking for another recipe.

Slow Cooker Chicken Taco Soup
I make this with chicken broth instead of beer, and one can of tomatoes with chilis, (adding a an of crushed tomatoes instead) and my family love it. Make it often when it's chilly outside or just when I need a no fuss, yummy dinner. We grate sharp cheddar cheese for a topping and serve with corn chips. I'm making it again today!
