Ratatouille Soup

Yummy!! My 7-year old said it was the best soup he'd ever tasted! ;-) Seriously, though, it is really easy and really good. Use low-salt beef broth for a healthier option.

Cheesy Salmon Pasta Alfredo

My 2 little boys (5 & 7) loved this! However, I'm only giving it 4 stars because it's really missing a color-element. I added a cup of chopped, frozen spinach (microwaved on a paper towel) into the final mix and it was so much more appealing and healthy.

Chicken Florentine Casserole

Broccoli Cheese Soup VII

I sent this as my son's lunch to preschool and all three of his teachers want the recipe. Not bad, huh? OH, and I had to make two batches in one weekend because I ate practically the whole first batch by myself. Only, I NEVER use the Velveeta/processed cheese. I used Cheddar, and in the first batch I threw in a little Colby/Jack mix and in the second batch a slice or two of Muenster. Add whatever you like, but I recommend basing it on Cheddar. Also, for my little guys, I smash up the broccoli before adding it so they wont freak out with the chunks and balk at eating the most healthy part of this soup.

Tofu Creamed Spinach

ooooh, is this YUMMY!! Seems pretty healthy, too! My 10 month old ate, my husband ate it, and my toddler WILL eat it when he's not being difficult! LOL!!

Barbeque Halibut Steaks

Me, I thought this was "very good" but my husband said it was the best meal he's had. Period. Served it with cous cous and Tofu Creamed Spinach. I do have to say it was SUPER easy and quick.

Beth's Chocolate Chip Cookies

I've been making this recipe for a few years now, and I'm famous for these cookies!! Only, I have recently cut down the sugar to 3/4 cup each brown and white, and I like the texture better-- not so grainy.

Perhaps the thing that is missing is nutmeg. A friend sent me a similar but more complicated recipe, and hers contained nutmeg. This is an easy version! I added broccoli to get my toddler his greens

Chicken Salad with Peaches and Walnuts

This is very good! I didn't have poppyseed dressing, though, so I used Raspberry Walnut from Paul Newman. My husband missed out, because he really likes the combination of meat and fruit.

Oh, was this GOOD!! I made it for a baseball playoffs potluck and everybody took seconds, if not thirds. I took someone's advice and added cherry tomatoes for a splash of color. Definitely goanna make this regularly!

Oh boy do my husband and I love this recipe! Only the first time I made it, I forgot to buy tomato juice, so I used a can of tomato soup instead. It was so good I've been doing that ever since!

This is so easy and good!! I like the variety with trying different sauces. And with a new baby, I appreciate this speedy recipe. Only, I use ricotta cheese instead of sour cream-- just as easy and more in line with the lasagna taste I think this recipe is going for.

Crunchy Turkey Salad

I LOVE this recipe, and so does everyone I've served it to. I make it about once a week! Only, I leave out the sour cream (just too 'sour'!) and lately I've been putting in dried canberries for a splash of color and zing. Yummy!!

Meatloaf on the Grill

Nothing special. Confessedly, I did not us the grill, but I added onions (mom's meatload always had 'em). My husband had to use hot sauce and I had to use ketchup. I'll be looing for a more flavorful recipe.
