Seafood Sandwich

So easy and so few ingredients with an absolutely delicious result! My family is taste testing sandwich recipes for an upcoming party and the decision was unanimous - this is a keeper!

Mozzarella Meat Loaf

Great starter recipe that you can work with according to your own tastes. I roasted an onion, garlic cloves, slices of yellow pepper, zuccini and mushroom with the fresh herbs I had on hand, thyme and basil, in the oven seasoned with salt & pepper and a drizzle of garlic infused olive oil. I took them out of the oven before the veggies charred, then pureed them before I added to the meat. I also season most of my beef recipes with a splash of sherry wine and a tablespoon of thick black soy sauce (available in Asian supermarkets). Had some left over parmesean cheese that I mixed into the meat mixture, too. When it was done it was moist and flavorful (and healthier). I made a baked ziti to round out the meal. I've never made meatloaf with mozzarella. This was a revelation - thanks!

Special Buttercream Frosting

My new favorite frosting! Easy and delicous. I used 1 cup butter flavor crisco and 1 cup butter. I used leftover frosting to make my own "oreos" - a great creamy center to 2 cookies sandwiched together. Awesome!

Yellow Cake

Was looking for a yellow cake recipe because all I had was chocolate cake mix in my pantry. This is a keeper. A moist tasty sponge that took little longer to prepare than cake mix. I followed other reviewers that reduced the oil to 2/3 c, sugar to 1-1/2 c and orange juice to 1/2 c (thanks). I made 2 dozen cupcakes -- baked them in 2 batches for 25 mins each time. Next time I'll put them in for 20 mins as the tops are not very soft when they cool if they're too brown. I melted 1 cup of white chocolate chips with 1 tsp of shortening in the microwave and when cooled, spooned this in a ziplock bag, cut a little hole in it and drizzled this over the cupcakes. This was not only easier then making frosting, but emphasized the tastiness of the cake.

Maple Roast Turkey

Great tasting and juicy turkey. This is the best turkey I've ever made. I will definitely make this again next year. Next time I will boil the cider vinegar and maple mixture longer. I don't think I reduced the mixture as it was intended because when it cooled, there was liquid beneath the butter. This made it too tangy to use for the gravy, but that did not affect the flavor of the turkey itself. This was such a good recipe, I couldn't even mess it up! *Actually, I did mess it up!! I mistakenly used apple cider vineger instead of apple cider and it still turned out great. I was wondering why the gravy was so tangy.
