Great starter recipe that you can work with according to your own tastes. I roasted an onion, garlic cloves, slices of yellow pepper, zuccini and mushroom with the fresh herbs I had on hand, thyme and basil, in the oven seasoned with salt & pepper and a drizzle of garlic infused olive oil. I took them out of the oven before the veggies charred, then pureed them before I added to the meat. I also season most of my beef recipes with a splash of sherry wine and a tablespoon of thick black soy sauce (available in Asian supermarkets). Had some left over parmesean cheese that I mixed into the meat mixture, too. When it was done it was moist and flavorful (and healthier). I made a baked ziti to round out the meal. I've never made meatloaf with mozzarella. This was a revelation - thanks!
