Blackberry Pie I

A wonderful pie for minimal effort! I followed the advice of others and brushed the inner crust with egg to keep it from going soggy, used fresh berries, substituted 1/4 cup tapioca for the flour, and added the zest and juice of half a lemon, and increased the sugar slightly. Yum! The lemon complimented the berry flavor nicely without being obvious. Even with the added sugar, the pie still had a nice tart flavor, and wasn't overly sweet.

Brazilian Black Bean Stew

Followed the advice of others and added frozen mango when no fresh mangoes were available. The mango was very good with it, we were glad we added the whole bag. We used 10 oz. of soy chorizo, ommitted the ham, and replaced the chilie with a small can of green chilies. It was a bit on the spicy side for us with these changes, but we prefer mild food, so others may like it that way. We'll definitely be making this again, and will be sure to try it with ham next time. This also made far more than six servings for us-we had to switch everything to a big stock pot partway through, but we had a large sweet potato, so that probably changed the portions.

Orange Chocolate Muffins

Baked Salmon with Tropical Rice

This is my new recipe I'll pull out when I'd like to impress company, we loved it. I cooked the rice seperately after reading other reviews since I wanted to use brown rice. Our favorite part was the rub for the fish, the coriander paired really well with the fish.

Chocolate Pudding Fudge Cake

After reading other reviews I only added one cup of mini semi-sweet chips. I baked it in two 8"rounds and it turned out great. Don't try to use this cake for a fondant covered cake though, I tried it and the cake can't support the weight of the fondant. It still tasted great though.

Fast Rice Pudding

Fine for a shortcut, though I've had better shortcut versions. For some reason mine turned out a bit slimy. Tasted all right, but like other reviews, you could halve the cinnamon and it would taste fine. Wonder if the author meant one teaspoon. I'll try another recipe next time.

Cherry Swirl Coffee Cake

Calling this Coffee Cake is a stretch. I've used a similar recipe in the past, using a more traditional coffee cake batter, that tasted much much better. I took the advice of other reviewers and added a bit of salt, but it did not help the batter. I did not alter the recipe other than adding salt. The batter cooked up like a pie dough, flat and flavorless. You might as well just mix flour and water together. I almost wonder if there was an error when the recipe was submitted. I strongly suggest you find a plain coffee cake recipe, pour 2/3 of the batter in a baking dish, top with pie filling, and pour the remaining batter on top and bake until batter is cooked through. Sorry but this was nearly inedible, and I'm usually pretty forgiving. I'm rather embarrassed because I made it to serve to company.
