Festive Fresh Blueberry and Cranberry Relish
I made this recipe for the first time this Thanksgiving, it was scrumptious! The blend of flavors, sweetness to tartness is perfect. Just as the others stated it was a bit runnier than I wanted, so I added 2 tsp. cornstarch (I had doubled the recipe). I will never buy or eat canned jellied cranberry sauce again!! Because it was still a bit saucy it was wonderful on French toast the next morning. I can see it on waffles, pancakes, ice cream, etc!!

Slow Cooker Enchiladas
I made this a couple of nights ago just as the recipe states & it's REALLY good and I will definitely make this again, it will make a great pot luck recipe too! My rating is for the recipe as it is written & NOT for the additions I made. I added a couple of sliced green to the top before slow cooking. I had black olives in the fridge and added those for whoever wanted them. Next time I will add another 8 oz. ground beef to make it meatier. I used a firm corn tortilla as I think a soft flimsy one would turn to mush from the moisture of the meat & cheese mixture. I suggest using a non stick spray your crock for an easier clean up later!! A note on the cooking time, it was not hot at the 45 minute mark, so I added another 20 minutes, but it could have gone for 2 hours to get nice & hot. Just keep an eye on it as we are @ 4500 feet!

Thai-Style Peanut Sauce with Honey
This recipe was fabulous! I made it just as the recipe stated. It was great drizzled over the shrimp and veggie lettuce wraps I had made. The recipe tasted just like at our favorite local Thai Restaurant. I will defiantly make again and incorporate it into other dishes. Thanks for sharing this wonderful recipe.
