Awesome Chicken Noodle Soup

Reviewed: Dec. 11, 2003
Can I say this is the best chicken soup ever? It's not as salty as the ones I've tried on this site and it's absolutely delicious! The lemon grass gives it that wonderful, subtle flavor. I'm sick, so I've been making a lot of chicken soups this week and this is my new favorite one. Lets just say, after I had myself a bowl in the morning, I came back for seconds in the afternoon, only to find an empty pan (makes a mad face). Thanks Alan.

Cajun Chicken Pasta

Reviewed: Dec. 6, 2003
This is identical to the other popular cajun pasta on this site. Didn't change a thing, it was fantastic. Spicy too!

Downeast Maine Pumpkin Bread

Reviewed: Dec. 6, 2003
Served this on Thanksgiving and everyone devoured it, they couldn't keep from picking at it! I followed the recipe to the t, except I halved the recipe to make one large loaf and used 1/2 white/brown sugar. It was devine, somewhat like carrot cake, but pumpkin instead. First time making, but it won't be the last!

Braised Balsamic Chicken

Reviewed: Nov. 24, 2003
This was good, but I'm not sure if it was my mistake or the recipe, but it was a little too vinegary. Anyhow, I followed the recipe to the t, except I added some sliced mushrooms to the onions while sauteing.

Oven Roasted Red Potatoes

Reviewed: Nov. 24, 2003
This was alright, if you like the taste of onion soup only. I think roasted potatoes with olive oil only is better.

Cindy's Tasty Wings

Reviewed: Nov. 21, 2003
I didn't have catalina dressing, so I used italian, instead of apricot, used boysenberry jam and it was different. It was pretty good, smelled wonderful though. Not sure if I'll try again...maybe when I get the right ingredients.

Buffalo Chicken Wings I

Reviewed: Nov. 21, 2003
Excellent wings. I read past reviews complaining it was not spicy enough, so I added more hot sauce and even a dash of cayenne. Boy did it make it spicy, almost too spicy! I think I'll just stick with the original and add a dash or two more.

Bacon Chicken and Dumplings

Reviewed: Nov. 13, 2003
I halved the recipe, but kept the liquid about the same, which was perfect. Followed the recipe to the t, but left out the 1/2 and 1/2 and added celery, used canned biscuits and reduced the poutry seasoning. Pretty good, although it was greasy, I had a hard time getting myself to swallow the broth, so I just ate the substance. Not sure I'd make again.

Jalapeno Chicken

Reviewed: Nov. 12, 2003
WOW! This is a SPICY one! It was delicious though. I followed the recipe to the t, except I didn't baste it during the baking time, I just poured the marinade in the pan and let it bake for 30 mins. I also left out the cinnamon because we don't like cinnamon in our meats! I only used 2 chicken breast and I must say, if the recipe calls for a whole chicken, you'll need more seasoning than what it calls for. I served these over mashed potatoes (the liquid ladled over them) and with corn, it was a wonderful southwestern meal! And it's quick too, great meal for those busy work nights! Note: I would suggest to sear the chicken first, then in the same pan, add the broth and scrape up the bits so no flavor is lost.

A-Number-1 Banana Cake

Reviewed: Nov. 11, 2003
I used this to make banana bread and it was right on target! Didn't even change one thing. I halved the recipe to make one loaf (which was perfect) and it couldn't have been any better. Out of all the banana breads I've made, this one is by far the best yet.

Tasty Tuna Burgers

Reviewed: Nov. 10, 2003
Awesome! Never knew canned tuna could taste so wonderful. I followed the recipe to the t, except I didn't add bell pepper or dill since I didn't have any. Anyhow, I felt 2 tblsps of chili sauce was way too much, but I followed it and it was spicy! Luckily, we love spicy foods and can handle it, but for others, either cut back on the chili sauce (2 tsps?) or you will be dying. Served these on sandwich slices and tomato and it was devine.

Deep-Fried Turkey

Reviewed: Nov. 9, 2003
Finally coming around to writing a review for this recipe. Thought it was perfect timing with thanksgiving coming around the corner. Anyhow, I suggest you marinade the turkey overnight, just seasoning the outside won't help much. You need to inject it with flavor. I suggest you mix melted butter and cajun seasoning, then inject it everywhere in the bird, then let it sit overnight in a fridge (in a trashbag). This does create a moist bird. A must try!

Blackened Chicken

Reviewed: Nov. 9, 2003
WOW! Never had blackened chicken before, so I didn't know what to expect. It was fantastic! Now I know why they call it that, it looks burnt, but it's not! Anyhow, omit the salt, it's not even needed with all the other seasonings included. I served this over mashed potatoes (with the leftover liquid from the pan since I didn't have any gravy) and corn and it was mmm mmm delicious!

Biscotti

Reviewed: Nov. 9, 2003
This was so easy and simply delicious! Only changes I made were to add toasted walnuts and anise seeds to the batter, then when it was completed cooked through, I dipped some into chocolate and it was devine! Hint: Watch them closely as they bake, they brown FAST!

Italian Wedding Soup I

Reviewed: Nov. 9, 2003
Yummy! I didn't have any beef, so I thought I could sub. sausage for it, BIG mistake! The meatballs came out SALTY!. Anyhow, I did take others advice and added chopped chicken and sub. spinach and used elbow macaroni. It was excellent (even w/o the meatballs)!

Sausage Gravy I

Reviewed: Nov. 8, 2003
Keep in mind that I was going to give this a 3, but my sister thought it was pretty good and my dog devoured all the leftovers, so 4 it is. Anyhow, I thought this was whatever. I actually LOVE southern food, but this one was a disappointment. I made this as directed and even when it was simmering, I threw in the bacon I cooked and let it simmer in it for added flavor. Anyhow, it was mediocre. Second time I made this, I used hot sausage, no bacon or it's dripping and cooked this the fast way (cooked sausage over skillet, added milk/flour in the skillet and stirred virgorously). I actually thought the second one tasted better. Anyhow, I'm not making this again.

Florentine Artichoke Dip

Reviewed: Nov. 6, 2003
This was pretty good. We've never had this before, so it was a first. I'm not sure how it's supposed to taste like. Anyhow, I followed a past reviews suggestion of reducing the cream cheese and mayo and that's a definite no no. Because I did that, the garlic was TOO strong. I then added all the cheese and mayo created and it was prefect. I served these with crackers, which were fine, but I found it tasted best with my own made chips (tortillas cut into triangles, coated with oil and sprinkled with parm. cheese and basil, baked until golden brown).

Mom's Chicken Cacciatore

Reviewed: Nov. 6, 2003
This was pretty good and super easy. I seasoned the flour more with cajun and the sort. I also left out the mushrooms and bell peppers since I didn't have any on hand. I used stewed tomatoes (which I diced up) and simmered this all in chicken broth (which I sub. for the wine) and served it over linguine noodles. Nice and simple meal. Thanks

Absolutely Ultimate Potato Soup

Reviewed: Nov. 6, 2003
We never had potato soup, so we weren't sure what to expect. It was average I guess. We like our soup with some substance (not just veggies). Served these with french bread and they were alright. Not making this again though.
