Sugar Cookie Icing

This icing is shiny and definitely hardens like it states, but it's very difficult to use in a piping bag to write words because it's too thick (even after "thinning" it lots with the syrup).

Chili I

I've been making this for years and it's my only go to recipe. The only changes I make is to reduce the cocoa powder and brown sugar and I like to up the meat and add corn and bell peppers.

Blueberry Buckle

Very good. I doubled the recipe, but kept the blueberries the same...it was still a lot of berries. I also used 1/2 white and brown sugar for the topping. I followed someone's advice about doubling the recipe and cooking it for 1 hour--do not do that! I practically burned the cake at 45 minutes. Just stick to the time stated on the recipe.

Grandma Johnson's Scones

Good recipe. I like to make orange/cranberry scones, lemon/blueberry scones, and my personal favorite: orange/lemon scones with orange/lemon glaze. The flavors are out of this world!

Simple Scones

This is my go to scone recipe. Although I like Grandma's scone recipe, I find that the flavor and texture of this recipe is better. I do follow the direction from the other recipe about combining the sour cream and baking soda and letting it sit until frothy. I'm not sure if it works, but it's never failed me!

Authentic Mexican Enchiladas

This is as authentic as you can get for Mexican food. I make a very similar recipe, but with a chile verde sauce. You can either dip the tortilla in the oil and then the sauce or vise versa. I prefer to do oil and then sauce, that way I can drain the oil on paper towels without losing any of the sauce. For the sauce, do not drain the water when it's done boiling, use that blend instead of new water. Also, to flavor the sauce, try adding onion and the chicken bullion with tomato flavor--trust me, it makes it taste wonderful! Just throw everything into the blender and blend. You can use whatever dried peppers you have on hand (chile de arbol peppers tend to be more spicier than the other dried varieties). Instead of rolling the tortillas, you can stack or just fold them over (like the picture). Although queso fresco doesn't melt very well, you can't beat the light and delicious flavor. I always use this cheese for my enchiladas. I like to add chopped onions to the filling too. And lastly, before you serve these, pop them in the microwave to melt the cheese a little. My husband, who is Mexican, loves them with either a cheese and onion filling or with cheese, onion, and chicken. Hope this helps!

Amish Breakfast Casserole

The best breakfast casserole ever! I made this the night before and popped it in the oven the next morning at 375 degrees to speed up the cooking time. I cooked the bacon and sausage, removed it and then added diced onions, garlic, and bell pepper, seasoning it with chili powder, salt and pepper. I then mixed all the ingredients (I also added pepper jack cheese, and used 7 extra large eggs). I served this at work with honey muffins and Cholula (mexican hot sauce) and everyone at work devoured it. I will definitely be making this again for an upcoming wedding brunch. Thanks.

I made this for lunch and my boyfriend could not stop complimenting this dish! I thought it was pretty good, but he loved it and told me to give it a 5/5. The only thing I changed was to reduce the olives because we do not care for it. I served this with some crusty bread and the garlic chicken recipe from this site and it was a lovely lunch. Ty

Hummus III

Very good recipe, but I shouldn't have added all the salt in at once because it was way too salty! Next time, I will add a little at a time, and I did not add the whole amount of garlic (that would've been too much for my family). At a lebanese restaurant that I go to, they drizzle EVOO with red pepper flakes and slices of fresh parmesan cheese on top of the hummus and that is how I always serve it. Really delicious!

Unbelievable Chicken

This recipe was a little too sweet for my taste. I broiled a whole butterflied chicken and served it with a light salad and hummus and pita breads. The chicken was just okay.
