Cajun Chicken and Sausage Gumbo
Ditto on the comments that the roux will need to cook longer (especially for a chicken/sausage gumbo). I have cooked and stirred for over 50 minutes to get a rich dark chocolate reddish roux. It is worth the time. Also, when making a roux you might try 3/4 cup oil to 1 cup flour. The key is to use equal weights of fat a flour. Use a good vegetable oil, no olive oil or butter and the roux will be perfect.

Chicken Breasts with Balsamic Vinegar and Garlic
A great chicken breast recipe. I doubled the sauce portion and added a little cabernet to add some richness. This recipe would be good with any cut of chicken.

Kielbasa and Cabbage
This is a solid recipe for Keilbasa and cabbage. I added a little more water and some potatoes as that was how I was tought to cook it. You could also add carrots if you desire. The amt of carraway seeds may be overpowering for some. I'll cut this back 1/2 next time I cook it. Also, I browned the sausage in the oven prior to adding to the cabbage mixture. Enjoy.
