My Honey and me...35 years together!
Spicy Tortilla Roll-Ups
About this Cook
I was born in Texas but have lived all over the place, including The Hague, Netherlands and Lima, Peru, S.A., where I graduated from high school. My wonderful husband and I are about to celebrate our 34th anniversary! We have 2 beautiful granddaughters, Aubrey & Amelia! God is good - ALL the time and all the time - God IS good!!
My favorite things to cook
I look at cooking as an artist looks at painting. They take blobs of color and create beautiful works of art for people to enjoy. I take individual ingredients and create something special for others to enjoy, not just visually, but through smell and taste. Cooking is art! My favorite is probably desserts, though. I also own my own soy candle business. 100% All Natural Soy Candles - hand poured with custom fragrances and colors. It's kind of like cooking, you just can't eat it! LOL!!!
My cooking triumphs
Catering a wedding for 300 people!!! It was a hit - chocolate fountain and all!
My cooking tragedies
While working at Sam's Club bakery I was baking a rack of cookies. There are 18 trays on a rack and 24 cookies on a tray. The oven bakes 2 racks at a time. The math? >>>> 864! Yep, 864 cookies BURNED!!!! :-0

Sloppy Joes II
I have used a recipe almost exactly the same as this one for years but I also add 1/4 cup bbq sauce and 1/4 tsp. Worcestershire sauce. These sloppy joes are amazing! I have also multiplied this recipe by ten when I cater! Everyone LOVES them!!! My mother would serve these for family dinner on a bun, opened-faced with a slice of American cheese and baked just long enough for the cheese to melt. A family favorite!!! Enjoy!!!

Powdered Sugar Cookies I
I have been making these cookies for many, many years and now my grand daughters ask for them, too! This is probably our family's #1 favorite cookie! I find it is easier to work when you chill the dough for at least an hour or longer. These cookies are very light, flaky and fragile, not like the rolled sugar cookies! They literally melt in your mouth!! I know it sounds like a lot of oil and butter but the recipe is correct! I recommend using 2 tsp. of vanilla though and remember to chill the dough. Also, I prefer to bake them closer to 10 or 11 minutes just until the edges begin to brown lightly.

Cafeteria Carrot Souffle
This is the YUMMIEST carrot recipe EVER! The trick is to use a food processor and puree the carrots. I use 1/3 cup white sugar and 1/3 cup brown sugar the rest is the same. I have catered this dish at rehearsal dinners and its always on our holiday table! A family favorite! My husband calls it carrot candy! HA! Men!!! ;-)
