Three Animal Italian Meatballs

Pretty tasty! I just used 1.2 lb ground turkey and 1 lb of Italian turkey sausage and kept the same amount of other ingredients. It made about 21 meatballs. I poured a jar of tomato basil pasta sauce and a can of diced tomatoes over the top. Then sprinkled on parmesan cheese. Served with wheat spaghetti for a delicious healthy dinner. Big hit with the guys!

Sausage Pasta

You can't go wrong on this one. For a healthier option, try using turkey Italian sausage. Excellent weeknight meal.

Amazing Italian Lemon Butter Chicken

Wow! What a impressive dish! I only gave 4 stars because of all the butter. I tried to cut back and use only 3/4 c butter which seemed to work fine taste wise, but hen I wanted more sauce so I added 1/2 jar of Trader Joe's Alfredo sauce, which caused me some separation problems in sauce. The taste was divine, but turned very oily. Also cut chicken up before frying. I'll try again and do as written. Thanks!

Slow Cooker Pork Cacciatore

I wasn't sure how this combination of ingredients would blend, but the flavor of sauce was amazing. Followed recipe as stated and it was very good. Tasted great as leftovers too.

Chicken Tortilla Soup II

Very good. I cut down on oil to 4 tablespoons when cooking tortilla strips. They fell apart in soup, but that actually worked out well and thickened up the soup. I slow boiled 3 chicken breasts in a dutch oven with cumin,chilli pepper, pepper, and little salt. I then saved this water and used as my chicken broth. I skipped bay leaves and added a can of black beans.

Sam's Famous Carrot Cake

10 Stars! I used regular milk, about 6 carrots, and soaked the raisins in OJ in microwave .....the result was AWESOME!! Everyone said the best carrot cake ever. I used cream cheese frosting recipe from my kitchen aid cookbook and added a little orange zest. Wow!

Butternut Squash Bisque

Outstanding soup! Roast the squash, add a granny smith apple, cinnamon, skip the cream (you don't need it), season to taste, and definitely use the emersion blender. Everyone will love it!

Chicken Florentine Rice Casserole

This was pretty good as is but I think I will try again and add some additional suggested items. (I skipped the cornstarch step and that add'l liquid. The result was a bit dry.) I think adding mushrooms and white wine would be good. I also like the sliced tomato and feta crumbles sound good. I will use again.Thanks Christopher!
