This recipe was excellent! I have to admit it was time consuming because you had to chill each layer, but it was SO worth it! will make again, and again, and again.. oh.. and again! thanks!

Traditional Carrot Cake

Reviewed: Sep. 24, 2006
This is the most incredible carrot cake!! I can't eat sugar and thought this recipe was so good! I served it to people who can have sugar and they thought it was just as good as regular carrot cake!! I didn't add coconut because I couldn't find any unsweetened so I added extra walnuts. I didn't think it would be as moist as it was, but the pineapple did wonders! So delicious!! This is the cream cheese recipe I used... 1 1/2 c. low fat cream cheese room temp, 2 tsp vanilla, 1 1/2 Tablespoon butter softened, 16 packets splenda,. Blend cream cheese and butter. Add splenda and vanilla. If its too thick for you, add 0-2 Tablespoons of milk to think it out...

Ronaldo's Beef Carnitas

Reviewed: Aug. 18, 2006
This is so good!! I marinated for 2 days in the fridge and cooked in a slow cooker all day with 1/2c. of beef broth. Next time I'll make 2 roasts so there is more to freeze (I froze a couple ounces just to see how it would keep. It unthawed and reheated perfectly)!! Great with avocado or guacamole!

Black Bean and Couscous Salad

Reviewed: Jul. 23, 2006
This recipe is incredible!!! I can't believe how good it is! Summer is here so I used corn on the cob from a farm stand that picked it an hour before I bought it. I grow an herb garden that has cilantro and garlic chives in it, so I used both those fresh herbs and I used a whole lime in the recipe instead of the amount mentioned. Delicious flavors blended at the end.. Wish I could give it 10 stars, I can't stop eating it, great amount of protein and fiber, excellent dish!!

Bill's Sausage Gravy

Reviewed: Dec. 11, 2005
never ate this before, but my mom rants and raves about it espically when she returns from vacations down South so I decided to try and make it... First time after following the recipe the gravy came out a little thick, but she said it was good. Next time I added a 1/2 c. of milk and she said it was PERFECT! thanks for the recipe

Homesteader Cornbread

Reviewed: Jun. 21, 2005
I've never had cornbread this moist! I followed the recipe to a T and it came out perfect. I agree with others, the trick to it being so moist is to soak the cornmeal for atleast 5 minutes. Not a very sweet recipe, but I'm sure you could change the sugar to 1 c. if you wanted it a little sweeter. Very good!!

Avocado and Bacon Soup

Reviewed: May 24, 2005
perfect accent for a Mexican meal!! The avocado and lime with crunchy bacon on top was great, things you wouldn't expect in a soup (I did thicken it with corn starch 2T. cs, 2T. water, blend in with a whisk). Perfect spring, summer meal on its own or as I did, served before a enchilada, burrito and taco meal amongst friends. will make again and again and again :)

Cha Cha's White Chicken Chili

Reviewed: Feb. 13, 2005
Delicious! I didn't know how this would turn out since there wasn't a thickening ingredient like red chili, but when everything is in the pot and you add the shredded cheese it thickens up perfectly! I did omit the can of jalapenos and stuck with the green chilies. Recipe is a keeper! thanks

Chicken Pot Pie VIII

Reviewed: Dec. 22, 2004
very tasty!! Im a fan of veggies and used a couple extra stalks of celery, an extra carrot and 2 large baking potatoes which made alot of filling (probably enough for 2 pies by the time I added the chicken). Since ther ewas so much left, I made extra gravy (the butter, flour chicken broth mixture) added it to the left over filling and it made a creamy soup. the soup is just as delicious!! Unfortunately I didnt have time to make the pie crust, I bought a pie crust premade. Next time I will be sure to make the pie crust mentioned in the recipe (and will add parsley like someone mentioned. seems like a good combination). thanks for the recipe!

Beer Battered Chicken

Reviewed: Dec. 19, 2004
love this recipe! i did add more beer to it. This recipe will come out the way you make it come out if you buy a cheap beer it will not be as flavorful. I've made this with Sam Adam's beer and also Harpoons IPA. They have the same batter consistancy as Chinese chicken fingers. theyre verrry good!
