Peanut Butter Ice Cream Topping
I used 2/3 cup peanut butter, 1/3 cup water and skipped the sugar. I heated up the water in the microwave and added the peanut butter to the hot water. I mixed it with a wire wisk and added a little extra water (about a tablespoon) to thin it out a little. It's perfect, exactly what I was looking for and very easy!!

Cocktail Meatballs
As previous reviewers recommended, I used one packet of Lipton Onion soup in place of the minced onions. Otherwise, I followed the recipe exactly. I made almost 40 meatballs with one pound of meat and cooked them on a broiler pan, which worked great. The meatballs by themselves were simply amazing! I could have eaten all 40 by myself! I made four pounds of meatballs for a get-together. After the meatballs cooled, I froze them for about a week and put them in the fridge the night before our party. In the morning, I made the sauce and let it warm up in the crock pot, then added the meatballs and let them simmer all day. The amount of sauce was perfect for the number of meatballs, but I thought it was too sweet (my husband agreed). All but about 5 or 6 meatballs were eaten and people seemed to like them, but, in the future, I will make this without the brown sugar.

Easy, Speedy Corn Muffins
These corn muffins were very good and easy. I used Jiffy Corn Muffin mix and left out the brown sugar. This recipe make a lot of batter! I was worried that two boxes of mix would not fit in one muffin pan. The muffin cups were filled to the top (not the 2/3 full the recipe calls for) and all of the batter fit (barely). The muffins had a nice "muffin top" and were very yummy, gooey, sweet (the sugar was not missed) and popular. I will definitely make this again!
