Strawberry and Feta Salad

We had at least 8 different dishes served over dinner, and this is the one that I received the most compliments on! The dressing by itself is a keeper, but when the salad is loaded with ripe strawberries and crumbled feta, you just can't go wrong!

Pesto Cheesy Chicken Rolls

More than doubled the recipe and got several repeat compliments after cooking this, and there was only one left by the end of the night. I made my own pesto. I didn't have fresh mozza so I sliced up a regular block and then cut those into strips to stuff into the inside, since the regular mozza is too inflexible to just roll up. Will use again!

Sweet Kielbasa

Mediterranean Linguine with Basil and Tomatoes

So delicious! I browned some chicken with salt and pepper, cubed it and tossed it in with the noodles, and got rave reviews. A fresh Italian taste!

Spicy Garlic Lime Chicken

Tasty! Once I cooked all the chicken, I added some cornstarch to the drippings to make a nice gravy sauce to put over it.

Rick's Special Buttercream Frosting

I used half shortening and half butter, and this came out perfect! It's light and fluffy, not overly sweet or choking like some frostings. Feel free to use different extracts-- I used mint extract when I made mint chocolate chip cupcakes. This will be my standard buttercream recipe from now on!

Too Much Chocolate Cake

Excellent! Moist and flavorful, exactly what you want in a cake. The only complaint I have is the oiliness-- I make cupcakes more than cakes and so the oil completely soaked through the cupcake liners (even if I double lined them!). When I make the cake, I'll use the regular amount of oil, but if I make cupcakes, I'll try 3/4 cup to keep the greasiness down. I'll never use another chocolate cake recipe ever again!

Lemon Square Bars

My family loved this, they were gone within the day! I was excited to try these because I wanted to see if homemade bars were better than the lemon bars you make out of the box. Personally, the crust was better than the box, but the filling tasted generally the same (which isn't a bad thing, I actually love the lemon bars out of the box!). I don't think we'll ever go back to the box, though, because the handmade crust is much better. People were also talking about the oiliness of the crust. I agree, it was oily, which I will just put less butter in next time, but overall, it didn't make a difference in terms of taste, just maybe in terms of your fat intake! ;) Thanks for the recipe, it's going into the recipe book!

Award Winning Soft Chocolate Chip Cookies

YOU MUST TRY THIS RECIPE!!!! These are HANDS DOWN, THE BEST chocolate chip cookies EVER. I made them with chocolate pudding mix, and those were the best chocolate chocolate chip cookies, better than cake mix cookies. You don't even need nuts. If you're looking for the perfect chocolate chip cookie recipe, look no further; you've just hit the jackpot.

Parmesan Chicken

Easy to make, but after several tries, I've still yet to figure out how to make the cheese stick better. I've resorted to putting a layer of cheese right into the frying pan and putting the chicken on top so it fries on. Also, make sure you flatten your chicken breasts to an even thickness (about a quarter or half an inch) first, or else cooking will take too long and will result in tough, dry chicken.

Manicotti II

Wow, these are amazing! I added extra spices because I love flavor, and it made it fantastic! I have also put the filling into jumbo shell pasta, which was easier than filling the manicotti, I thought. To fill, I used a ziploc sandwich bag, filled it with the meat, and then clipped off a corner, like a makeshift frosting bag. Filling and clean up was so much easier.

Fantastic! My family loves these so much that it became an addition to our list of Christmas cookies we bake annually! I like the raspberry preserves the best, but I've made them with any and every type of jam and jelly we've had available. Feel free to experiment!

Pecan Sticky Muffins

My family LOVED these, they weren't even any leftovers! The only problem I have is that a lot of the pecans stuck to the pan, even though I followed directions. It's one of those things that really just depends on luck whether or not you get a good turn out of how many come out easily, but next time I'll either put the nuts on top, or use aluminum baking cups to make cleanup easier, but I'm no longer trusting my Pam spray to get these out of the pan easily. Also, if you wanted to make this any more sugary, I would totally put pancake syrup over the top!

Braised Balsamic Chicken

This recipe is great, my family raved over it! I had to used sliced stewed tomatoes instead of the diced ones, but that didn't make any difference in terms of taste. If I could do it differently, I would put in 1/3 cup of balsamic vinegar and the rest chicken broth, because I thought it was a bit strong (though my family doesn't want me to dilute it, they love it how it is!). The wide opinion among my tasters is also that it tastes better over the pasta instead of the rice, though the suggestion for pairing it with mashed potatoes sounds REALLY good. Thanks, this is a keeper!

Artichoke Spinach Lasagna

This is a fantastic recipe! This went so fast that I don't think we'll ever be using our old lasagna recipe again! It is a vegetarian dish and my family likes lots of meat, so I browned two packages of Jimmy Dean ground sausage and added it to the artichoke mixture after I stirred in the pasta sauce. The sausage takes up a lot more room, so I ended up only having room for 2 layers of noodles. Fantastic recipe!
