Jen's Hamburger Soup

My kids (9 and 6) usually don't like stew like dishes but they did eat some of this. I had more than 3 cups of butternut squash, so I added water that was flavored with tomato paste. I used ground chicken, which I browned with onion and garlic. I used a homemade taco seasoning that I got from allrecipes, and that allows me to control the level of heat and spice I put in. I keep it very mild for the kids. My husband and I then added a few dashes of hot sauce to our plates. I served it with crusty Whole Wheat bread.

Sweet and Tangy Sauteed Collard Greens

This was great. even better when you cook the greens in chicken stock. I got away with simplifying the dressing to equal parts balsamic and sugar

Uptown Cowboy Caviar

This is my new go-to party dish. The only change I make is that in exchange for the pinto beans (pintos aren't my favorite) I add another can of either black beans or black-eyed peas. Every party I have served this at, it gets rave reviews and people want the recipe. I also love the left overs the next day for a healthy lunch.

Orzo with Mushrooms and Walnuts

I am only giving this 4 stars because of how much I added to the recipe - I can't really comment on how it would be as directed. After reading other reviews, I added chicken sausage, garlic and kale. I also kept out the walnuts and I reduced the orzo to 1 cup. Here is what I did it and it was a big hit ... I caramelized the onions and garlic in a large stainless steal covered pan. I then added a 12 oz package of spinach and garlic chicken sausage from my local grocery store until browned. In went the mushrooms (about 3/4 lb) and I also added a small amount of kale cut in small pieces. I added 1/2 cup cooking sherry and boiled all of that down until kale and mushrooms were tender. I then added 2C broth and 1C orzo. I ended up needing about another 1/2 -3/4 cup broth to finish the orzo - but it might have been due to the heat being too high on the stove. This was our main dish, served with some rustic bread - it was wonderful!

Sweet Pepper Pasta Toss with Kale

This is a great use of kale - but I suspect that spinach would taste great in this as well. I read through most of the reviews and I modified the recipe based on the feedback that there needed to be a sauce and to double the kale. I used the Butter Sauce that I found on this site and it worked out great. I also added a grilled chicken breast on top of the bowl of pasta, to add some needed protien. I will definately do this dish again.

Spicy Cranberry Chutney

I made this for Thanksgiving dinner last year. It was the first time I ever WANTED to eat my turkey with cranberry sauce. This also made an EXCELLENT spread for leftover turkey sandwiches. This will be a new Thanksgiving tradition.

South of the Border Slaw

This was truly a pleasent surprise! I made it with a 1/2 bag of pre-shredded slaw. If you think you will have left overs - I would recomend keeping the chips separated until you are ready to eat, because they don't do well over night in the fridge. I served this as a side with Turkey burgers and sweet potato fries. I piled the slaw right onto my turkey burger with cheese and guacamole! FANTASTIC, it really made the meal!

Cranberry Apple Raisin Stuffing

You can make a Breakfast dish from the left overs! I got RAVE reviews from my family when I made breakfast with the left over stuffing! I mixed up 6 eggs, milk and some additional sugar and cinnamon – I added stuffing until the mixture was well saturated, and still had a little egg liquid to it. I then put it in a Bunt cake pan (just to make it pretty – but you could put it in anything) and put it in a 350 degree oven for about 40 min. But I really just needed to keep checking it until the egg mixture was all cooked through. You can then dust the top with some powdered sugar, and maybe some dried cranberries for a nice presentation. My guests ate it with butter and maple syrup, and I also had one guest that ate it spread with light cream cheese (for a less sweet option) With all the egg in it – this bunt cake stretch very far when served with some bacon and fruit for a very nice, post Thanksgiving breakfast. I served 6 adults – and still had a few slices left over. My guests liked the stuffing this way, better than they did for the Thanksgiving dinner. For dinner, they missed the more traditional stuffing that we usually serve.

Absolutely the Best Nacho Dip Ever

This truly is the best ever nacho dip. My mother brought this to a dinner I was having and I knew I needed the recipe. I have made it several times since and have always gotten compliments on it.
