Jo's Rosemary Bread

Didn't use a bread machine and used whole wheat flour instead of white...turned out super soft and chewy with a crispy crust! Very good!

Peanut Noodles

Loved loved loved them! They were super quick and easy to make...they tasted even better cold! I did think they were a little salty so I think next time I will use light soy sauce instead. Oh and I was out of ginger and they still tasted great! Thanks for a wonderful vegetarian recipe!

Tofu Creamed Spinach

Wonderful!!! Amazingly creamy...I put it on a whole wheat pizza crust with some mushrooms and mozzarella. A perfect pizza! Oh and I added nutmeg and extra garlic.

Pecan Crackers

Well I have been wanting to make these forever and finally got around to it. They turned out really yummy...kinda like pecan pie only so much easier. I'm not sure why the recipe calls for margarine and butter. I used all butter and they turned out fine. Also, not sure why the stove top mixture has to boil for three minutes. I was afraid it would taste burnt so as soon as it was nice and thick I spooned it over the crackers. Overall really good

Simple Whole Wheat Bread

This is my all time favorite bread recipe...I make it using only whole wheat flour and it is delicious. Instead of using loaf pans, I shape it into balls, cut a criss cross across the top and bake it. It comes out crunchy on the outside and sweet and oh so soft on the inside. Oh and the leftovers make incredible croutons for soups or stews!

Apple Butter Cookies

These cookies turned out pretty good. I used a cup of whole wheat flour and only 1 tbs of milk. They didn't turn out flat at all and instead were quite fluffy. I think they could have used some additional flavor...maybe a little extra nutmeg or cinnamon but overall were pretty yummy, healthy, and easy to make. I think some people had trouble because they tried making the cookies too big. Directions say drop tsp amt of cookie dough onto sheet. Try making smaller cookies and they shouldn't spread out as much.

Morning Glory Muffins I

I think these are wonderful! With a few adjustments they can be healthy too. I used 1 1/2 cups whole-wheat flour and 1/2 cup of milled flax seed. I added oats to mine as well. I also used 1/2 cup of stevia and 1/4 cup of brown sugar in place of the white sugar. I didn't use any egg yolk and reduced the oil to about 2 tablespoons. They were amazing! I have made them several times now and we never get sick of them!

Potato Chips

For the most part, I only use my microwave to heat up cold coffee...BUT these are amazing and I think my microwave is going to be doing a lot more work around here. I don't think there will be any chips left by the time my hubby comes home from work :)

Tofu Quiche with Broccoli

I loved this recipe...I have already emailed it to family and friends. My husband had no idea it was tofu. I took another person's advice and made a couscous crust. It was delicious! Thanks for such a great recipe.

Egg-Free Low-Fat Oatmeal Cookies

I thought these were great! I took someone else's advice and used baking soda instead of powder. My husband said they tasted more like muffins than cookies. But we both loved them. I added some flax seed to mine and I think next time I will use some whole wheat flour. Really good,quick, and healthy. Thanks for the recipe.

Low-Fat Broccoli Soup

With a few added ingredients this is a really simple delicious soup. I added a few fresh mushrooms and thinly sliced celery to the broccoli and seasoned the soup with oregano and thyme plus lots and lots of pureed garlic and cracked pepper. Way better than any store bought soup!

Low-Fat Cherry Cobbler

My hubby and I loved this! He is on a special diet so sweet treats aren't on the menu very often. It definitely tasted more like a cake than a cobbler but no complaints here. It actually tasted better the next day. I had some trouble getting the middle completely done and ended up stirring the cherries into the mix and baking it a little longer. Perfect! Thanks for the guilt free recipe :)

No-Fuss Rice Pudding
