West Indian Curried Chicken

This recipe is so simple and oh so good! My husband loved it! Just as good as anything I've had in any restaurant (even though it made my house smell like curry for a day)! I've been wanting to make curried chicken forever and the fact that I can do it so simply now blows my mind! The other great thing is that you only have to use one spice which you can find in any store. I'm not even sure the curry powder I used was the best quality and the taste was still awesome! I used sliced pieces of chicken breast and browned in two batches. I also forgot the garlic and only used two small potatoes. Next time I'm going to add in some diced carrot and more potato for extra veggies! I also added a little flour after I poured in the water to ensure the sauce got thick since I didn't know if the potatoes would produce enough starch. I paired this with brown rice and it made for a nice healthy meal. FYI...I see that some reviews say it was too salty. I didn't use the salt amount from the recipe but instead just sprinkled a little all purpose seasoning on each piece of chicken and that was it. I can see how if I had added 2 tablespoons of salt it would have been way too much.

Diet Soup

So easy! You could really use anything you want in this soup. Although the onion soup mix does add a boost in flavor since it usually has MSG and high sodium next time I'll try using sea salt and some other naturally spices.

Best of Everything Veggie Burgers

This recipe rocks! My first time making veggie burgers and they were soooo good! The mix itself before you cook it even smells great! I pulsed the beans in a food processor to save time but next time I will pulse one or two times less so they're stiffer. I used red pepper and pan cooked up the burgers too. Also, my mix made 8 patties when I used a half cup scoop and a patty mold!

Blackened Tilapia with Secret Hobo Spices

Great taste and simple to do! I used approximations and none of the oregano, thyme or celery seed and it still worked out nice and yummy! The note about the bread is TRUE!

Best Cream Of Broccoli Soup

I picked this recipe because I love cream of broccoli soup and it looked easy. Well it certainly was easy but it wasn't that "Campbells" or restaurant taste I was looking for. It was healthy, edible and probably meant to be how real cream of broccoli sans all the preservatives, ect. should taste

Sweet Potato Pie I

I followed the recipe just as it is written except that I used canned yams to save time and it tasted awesome! I even spilled extra cinnamon in by accident in one of my pies and it was still good!

Easy Sausage Stuffing

I was afraid to make stuffing because I was told the seasoning is hard to get down but this was so easy and so good! I used sweet sausage and that was fine. I added mushrooms because I saw that in another recipe and thought it was a good idea to make it even heartier. I used the poultry seasoning, onion powder, Accent seasoning, pepper and a little salt. I also used seasoned bread crumbs and the taste came out awesome. Next time I will probably use a little less salt though since I won't be so worried that the taste might not be right :) Also, I watched some food shows on how to make stuffing and saw another good tip which was to make sure that the stuffing is moist before baking. I used two cans of chicken broth and that did it! Doing this was the best idea because it helped me see what the stuffing was supposed to look like before I baked it.

Oatmeal Chocolate Chip Muffins

These were quick, easy and tasted as good as they sounded! To make them healthier next time I plan to use apple sauce instead of oil, whole wheat flour instead of all-purpose and maybe add a banana or pumpkin! Also, I thought that the quantity of baking soda and salt sounded like it was going to be too much. I think I'll use a little less of each next time.
